Chicken Cacciatore

Ingredients
4 chicken thighs
2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
1 1/2 teaspoons dried oregano leaves
1/4 cup coarsely chopped fresh basil leaves
Directions
Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
In a large heavy saute pan, heat the oil over a medium-high flame.
Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.

Super Easy Chicken Cacciatore
In this video, I go through the few steps to making an easy chicken cacciatore. It’s perfect for when you need to feed a crowd and is surprisingly simple.
Full Recipe:
One great thing about this dish is how many it’s able to feed. If you cook up some pasta, rice or something similar then you can feed even more. This recipe alone should feed about 4 people but this really depends if you're feeding big eaters or not.
If you need a list of ingredients, then you can find one below.
• 1 Tbsp. vegetable oil
• 1kg (35 oz.) of chicken pieces
• 1 Brown onion, sliced
• 2 tsp. garlic, crushed
• 1 Red Bell Pepper, sliced
• 1 Cup sliced mushrooms
• ½ cup red wine
• 600g (21 oz.) pasta sauce
• ½ cup pitted Kalamata olives
• ½ Tbsp. dried basil
You’re able to use any type of chicken cut in this recipe. Chicken on the bone is likely to add more flavor but something like breast or thigh will be a lot easier to eat.
A few of the ingredients in this dish are optional, for example you can leave the red wine out of the dish completely. You can also not add the Kalamata olives if you don’t like them.
When you first add the chicken make sure the pan/pot is very hot. If it’s cold, then you will stew the chicken instead of sealing it.
Make sure you keep any leftovers as they will reheat well the next day. Just make sure you store it safely in either the fridge or freezer.

Learn how to make this easy to make chicken cacciatore recipe. This isn't completely traditional with the absence of a couple of ingredients but I feel this combination of flavours is perfect. Cacciatore means hunter or hunter style and is traditionally made with chicken or rabbit and in this instance we use chicken.

2 1/2 Tbsp (50ml) - Unrefined Olive Oil
5-6 - Large Chicken Thighs, Bone In & Skin On (Boneless & Skinless Is Fine Too)
2 - Brown (Yellow) Onions, Diced
5 - Garlic Cloves, Crushed & Roughly Chopped
1 - Large Red Bell Pepper (Capsicum), Thinly Sliced or Diced
2 - Carrots, Washed & Thinly Sliced
250g (8.8oz) - Button Mushrooms, Thinly Sliced
5g (0.3oz) - Thyme
7g (0.25oz) - Flat Leaf Parsley, Roughly Chopped
7g (0.25oz) - Basil
1 tsp (0.5g) - Dried Oregano
1 tsp (0.5g) - Dried Rosemary
3 - Dried Bay Leaves
1/2 Cup (125ml) - Red Wine or Chicken Stock
3 Tbsp (42g) - Concentrated Tomato Paste
2 1/2 Cans (1kg) - Canned or Diced Tomatoes

Notes -
This recipe can contain olives but I feel it's unnecessary in this dish and the flavour is overpowering. If you wish to add olives, add in 100g of halved & pitted kalamata olives.

Easy Chicken Cacciatore For One - Italian Comfort Food
Chicken Cacciatore is an easy to make, low carb, rustic skillet dinner recipe made with one chicken thigh simmering in a rich and hearty tomato based sauce.

???? INGREDIENTS
1 (6-ounce) boneless, skinless chicken thigh
¼ teaspoon kosher salt
⅛ teaspoon coarsely ground black pepper
1 tablespoon olive oil
¼ cup chopped onions
¼ cup chopped green bell peppers
1 clove garlic , minced
½ teaspoon dried rosemary
¼ cup dry white wine
⅓ cup canned diced tomatoes , with their juices
???? INSTRUCTIONS
1) Sprinkle both sides of the chicken breast with salt and pepper. Set aside.
2) In a 10-inch skillet over medium-high heat, heat oil 30 seconds.
3) Add chicken to the skillet and cook 4 minutes on each side. Transfer chicken to a large plate, cover, and set aside.
4) Add chopped onions, bell peppers, garlic, and rosemary to the pan and cook, stirring occasionally, 2 minutes.
5) Add wine and bring to a boil. Cook 2 to 3 minutes, stirring occasionally until almost all of the wine has evaporated.
6) Stir in the tomatoes and add the chicken back to the pan. Reduce heat to low, cover and simmer 25 minutes until chicken is cooked through.
7) Taste and add additional salt, if needed.
???? Expert Tip
A) Consider keeping chicken pieces in the freezer so you can easily pull one out, defrost it, and cook it when ready. Look for chicken thighs (or breasts) and purchase them when they're on sale. Then, immediately divide, individually wrap, and freeze pieces for later use. The USDA recommends freezing chicken breasts no longer than nine months for optimal quality.
B) If you have wine leftover, you can freeze it by pouring it into ice cube trays and placing the trays in the freezer. When you want to use a little wine in a recipe, pop out one of the frozen wine cubes and add it to your recipe.
