Chicken Cacciatore:
1 whole Chicken (cutup)
4 cloves Garlic (halved)
2 Onions (sliced)
4-6 Scallions (Green Onions) - bottom portion
1/2 cup Parsley
1/2 cup Basil
2 qts Peeled Plum Tomatoes
1/2 cup Olive Oil
1 tsp Oregano (approx)
Salt & Pepper to taste
Optional:
1 lb Pasta/Linguine
Grated Pecorino Romano (sprinkle on top)

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.

How To Make Chicken Cacciatore By Rachael
Loaded with fresh herbs and earthy porcini mushrooms, this rustic Italian dish is hearty and satisfying.
Chicken with Tomato Wine Sauce (Chicken Cacciatore)
Here is what you'll need!
Chicken Cacciatore
Servings: 4
INGREDIENTS
1½ pounds chicken thighs
3 tablespoons olive oil
8 ounces mushrooms, sliced
½ medium-sized onion, sliced
1 red bell pepper, sliced
2 tablespoons tomato paste
4 cloves garlic minced
1 teaspoons dried oregano
½ teaspoon crushed red pepper flakes
½ teaspoon rosemary
½ cup red wine
1 14-ounce can diced tomatoes
1 cup chicken stock
¼ cup fresh parsley
Salt, to taste
Pepper to taste
PREPARATION
Liberally season chicken thighs with salt and pepper.
In a medium-sized skillet with high sides, heat 1 tablespoon of olive oil over medium-high heat. Add chicken and cook 3-4 minutes a side, until lightly browned. Transfer to a plate.
Add another tablespoon of olive oil to the skillet before adding the mushrooms. Lightly season with salt and pepper and cook until mushrooms begin to brown, about 5 minutes. Once browned, remove mushrooms to the same dish with the reserved chicken thighs.
Add the final tablespoon of olive oil followed by the sliced onion and pepper. Season with salt and pepper and cook over medium heat until they begin to brown, about 5-7 minutes.Create a well in the middle of the onion/pepper mixture and add the tomato paste. Cook out the tomato paste for about 1 minute before mixing it together with the onions and peppers.
Add garlic, oregano, red pepper flakes, and rosemary. Mix them into the onion and peppers before adding the red wine. Use the moisture from the red wine to scrape off any stuck-on bits from the bottom of the pan. Let wine reduce by half before adding the diced tomatoes and chicken stock. Return to a simmer.
Place chicken and mushrooms on top of the simmering sauce, being sure to also add any accumulated juices that may have collected. Sprinkle with chopped parsley and cook while covered for 12 minutes or until chicken’s internal temperature reaches 165˚F/75˚C.
Serve chicken and sauce with a side of pasta or bread.
