Skillet Chicken Cacciatore!
Chicken Cacciatore is an Italian comfort food and I love making it in my iron skillet because it is so quick and easy. This dish can be served with any pasta or rice of your preference. My favorite way to serve it is with Potato Gnocchi! As always I hope you give this recipe a try, and I am sure it will become a favorite.
Chicken Cacciatore
Ingredients
6 boneless skinless chicken thighs (you can use chicken breasts or tenderloin also)
2 strips of bacon
1 cup of diced onion
1 cup of chopped carrot
1/2 cup of chopped celery
2 cloves of garlic
1 tbsp of flour
2 to 3 tbsp of tomato paste
1/2 cup of white wine
2 cups of chicken broth
1 can of diced or stewed tomatoes
1 tsp of dried basil
1 tsp of dried oregano
1 tsp of dried thyme
1 tsp of salt
1/2 tsp of pepper
Instruction
1. Cut bacon into pieces and cook in large skillet until crisp. Remove bacon from skillet and add the chicken that has been seasoned with salt and pepper. Allow the chicken to cook a couple minutes on each side then remove chicken and place it on a plate.
2. Add the onion, carrots, and celery to the skillet and cook until the vegetables begin to soften, then add the garlic, flour, and tomato paste.
3. Add the wine, chicken broth, and tomatoes, stirring until everything is mixed completely.
4. Add the chicken back to the sauce, then cover and place in a 350 degree oven for 30 to 45 minutes until chicken is tender and sauce has thickened. (if the sauce seems to thin you can add more tomato paste)
5. Serve over pasta or rice. Eat and Enjoy!

As the last bits of summer fade away, the leaves begin to turn and the nights start to require an extra blanket. Fall is definitely on its way and that means it’s time to start thinking about fall cooking and baking. I have several “transition recipes”, as I like to call them, that we make as go-to dinners during this period of late-summer, early-fall. On today’s Torte Test Kitchen, I’m sharing one of those meals I used in Live and Let Pie, book #9 in my Bakeshop Mystery Series: A delicious and easy-to-make chicken cacciatore recipe. Sterling makes this one in the book as an homage to his mom.
If you’re looking for a hearty fall recipe, this one will have your kitchen smelling divine and may just become a seasonal favorite. ????????

CHICKEN CACCIATORE
INGREDIENTS:
2 tablespoons olive oil
4 chicken breasts
1 onion
2 carrots
2 stalks of celery
4 cloves of garlic
1 cup dry white wine
2 15-ounce cans of crushed tomatoes
1 cup chicken stock
2 tablespoons balsamic vinegar
1 teaspoon brown sugar
2 springs chopped rosemary
3 bay leaves
1 15-ounce can black olives
1 jar pitted Kalamata olives
DIRECTIONS:
Add olive oil to Dutch oven or large stock pot and heat to medium. Cut chicken into one-inch strips. Once oil is heated, add chicken and brown on both sides. Remove from heat and set aside. Dice onion, carrots, and celery and cook over low heat for ten minutes, stirring frequently. Chop rosemary and garlic and add to pot. Allow to cook for one minute. Return chicken to pot and add chicken stock, balsamic vinegar, white wine, tomatoes, black and Kalamata olives, and bay leaves. Stir thoroughly. Cover and let simmer for 5-10 minutes.

Ingredients:
Bone in chicken, thighs and legs
1 bell pepper and 1 onion, sliced
8oz mushrooms, sliced
6 cloves garlic, chopped
14oz can stewed tomatoes
14oz can diced tomatoes
1 tbsp tomato paste
2 bay leaves
2-3 oz black olives
1 can chicken broth
Seasonings to taste:
kosher salt, black pepper, granulated onion, italian seasoning, roasted garlic seasoning, thyme, red pepper flakes
Optional: rosemary infused sea salt from Saltopia ( I ordered from QVC)
Get out of the drive thru and get into the kitchen.
