Honey Garlic Asian Chicken Kabobs
RECIPE:
Honey Garlic Asian Chicken Kabobs - This honey garlic marinade is to die for! Marinate overnight and throw on the grill when ready to serve. So easy + fast!
INGREDIENTS:
1/4 cup oyster sauce
2 tablespoons ketchup
2 tablespoons honey
2 tablespoons chili garlic sauce
1 tablespoon Dijon mustard
3 cloves garlic, minced
2 teaspoons freshly grated ginger
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
1 1/2 tablespoons canola oil
Kosher salt and freshly ground black pepper, to taste
2 green onions, thinly sliced
1/2 teaspoon toasted sesame seeds
DIRECTIONS:
1. In a medium bowl, combine oyster sauce, ketchup, honey, chili garlic sauce, Dijon, garlic, ginger and 1 tablespoon water. Reserve 1/3 cup and set aside.
2. In a gallon size Ziploc bag or large bowl, combine oyster sauce mixture and chicken; marinate for at least 2 hours to overnight, up to 8 hours, turning the bag occasionally. Drain the chicken from the marinade.
3. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste.
4. Preheat grill to medium heat.
5. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 10 minutes. Brush skewers with reserved oyster sauce mixture, cooking for an additional 1-2 minutes.
6. Serve immediately, garnished with green onions and sesame seeds, if desired.

Recipe for Grilled Chicken Kabob:
Organic Boneless Chicken Thighs - 4-5
Marinade:
- Oil (mustard) - 1 tbsp
- Mustard seed powder- 2 tsp
- Cumin seed powder- 1 tsp
- Cilantro seed powder- 1 tsp
- Red Chili powder- 1 tsp
- Ginger Garlic paste - 2 tbsp
- Salt - to taste
Garnish:
- Red onions - diced
- Cilantro - chopped
- Mayo
Preparation:
Chicken - Wash and dry the chicken thighs. I have used organic chicken with some fat, which makes them juicier. Cut into smaller pieces which will be easier to put on the skewers
Marinade - Grind mustard, cumin and cilantro seeds into a fine powder. Crush ginger and garlic to a coarse paste. Pour the ingredients for marination on the chicken. Rub to coat all sides of the chicken with the marinade. Set aside for 2-4 hours to marinate.
Skewers - Fold the chicken pieces and penetrate with the skewer to make kabobs. Place some distance between each piece. This allows for heat to get to the ends touching the skewer.
Process:
- Pre-heat the grill
- Brush the grill with some cooking oil
- Once hot, place the marinated chicken kabob one skewer at a time. Keep on high for around 3-5 mins to develop grill marks.
- Turn them on the other side & continue the same on the other side.
- Now prop the skewers on stands to prevent burn but allow for cooking
- Keep basting it with the leftover marinade and oil
- Lower heat to medium & turn the skewers again to cook for another 4-5 mins on each side.
Once cooked plate the grilled chicken kabob and liberally sprinkle the garnish on top. Serve them with, Mayo or Cilantro Chutney.

Greek Chicken Kabobs - Super juicy, tender kabobs made with the best marinade ever! Olive oil, lemon juice, paprika, oregano, basil, thyme, garlic. SO BOMB.
INGREDIENTS:
4 tablespoons olive oil, divided
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
1 teaspoon paprika
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon dried thyme
3 cloves garlic, minced
1 shallot, minced
Kosher salt and freshly ground black pepper, to taste
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
DIRECTIONS:
1. In a medium bowl, combine 2 tablespoons olive oil, lemon juice, lemon zest, paprika, oregano, basil, thyme, garlic, shallot, 1 1/4 teaspoons salt and 1 1/4 teaspoons pepper.
2. Stir in chicken until well combined; marinate for at least 2 hours to overnight, turning occasionally. Drain the chicken from the marinade.
3. Thread chicken onto skewers. Brush with remaining 2 tablespoons olive oil; season with salt and pepper, to taste.
4. Preheat grill to medium heat.

1 thumb-sized piece of ginger peeled minced
3 tbsp dark soy sauce
