Rhubarb Strawberry Lattice Pie
Rhubarb Strawberry Pie is the perfect combination of sweet with a little tart. The rhubarb is pucker-your-mouth tart. However, add a little sugar and some ripe, juicy strawberries, and it is delicious.

Strawberry Rhubarb Crisp

Ingredients
4 cups fresh rhubarb, 1-inch diced (4 to 5 stalks)
4 cups fresh strawberries, hulled and halved, if large
1 1/4 cups granulated sugar
1 1/2 teaspoons grated orange zest
1 tablespoon cornstarch
1/2 cup freshly squeezed orange juice
1 cup all-purpose flour
1/2 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup quick-cooking (not instant) oatmeal, such as McCann's
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
Vanilla ice cream, for serving
Directions
Preheat the oven to 350 degrees F.
For the fruit, toss the rhubarb, strawberries, 3/4 cup of the granulated sugar and the orange zest together in a large bowl. In a measuring cup, dissolve the cornstarch in the orange juice and then mix it into the fruit. Pour the mixture into an 8-by-11-inch baking dish and place it on a sheet pan lined with parchment paper.
For the topping, in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, the remaining 1/2 cup granulated sugar, the brown sugar, salt and oatmeal. With the mixer on low speed, add the butter and mix until the dry ingredients are moist and the mixture is in crumbles. Sprinkle the topping over the fruit, covering it completely, and bake for 1 hour, until the fruit is bubbling and the topping is golden brown. Serve warm with ice cream.

PA Dutch Strawberry Rhubarb Pie in Jo Ellen's Kitchen 5 17 21
Lebanon PA: PA Dutch Strawberry Rhubarb Pie in Jo Ellen’s Kitchen
Yields 2 ten” deep-dish pies
Ingredients:
• 6 cups Rhubarb sliced into bite-sized pieces
• 3 cups Strawberries sliced into large chunks
• 2/3 cup brown sugar
• 2/3 cup white sugar
• 2 tablespoons citrus juice—orange or lemon, and zest if desired
• 1 teaspoon vanilla
• ½ teaspoon salt
• ½ cup cornstarch
• 4-6 tablespoon sized pats of butter quartered
• Homemade, or 3-4 Pillsbury readymade crusts
• Optional: 1 large egg and 1 tablespoon milk
Directions:
• Pour rhubarb, strawberries, sugars, citrus juice, vanilla, salt, and cornstarch into a large mixing bowl.
• Gently tumble ingredients with a wooden spoon until coated.
• Butter pie plates.
• Roll out crust into pie plates, and pierce both sides and bottom to avoid air bubbles.
• Pour filling into crusts.
• Roll out 1-2 more crusts, and cut into ½” strips.
• Cris-cross strips into a lattice or basket weave on top of filling.
• Flute edges.
• Bake at 350 degrees for 50 minutes, removing from oven halfway. Add butter pats to top, and cover with foil to keep from over browning.
• Optional: Whisk egg and milk together, and brush on top of lattice crust. Sprinkle sugar onto mixture for extra sweetness.
• Cool for at least 30 minutes before slicing.
• Slice, serve, and enjoy!
Fresh Strawberry Pie Recipe
This recipe is an easy and delicious way to use fresh strawberries. Its perfect for anytime of the year, but its best when strawberries are at peak season. You can use a pre-made pie shell or your own favorite pie crust recipe. I decided to use the Fresh Strawberry Pie from Flying saucer Pie Co. as inspiration for this recipe. If you live in the Greater Houston, Texas area or just visiting, you should definitely make your way to the Flying Saucer Pie Co. shop for a fresh slice.
INGREDIENTS
1 1/2 lbs Fresh Strawberries
9 inch deep dish pie shell (from scratch or pre-made)
GLAZE RECIPE
3/4 cup sugar
3 tbls corn starch
1 1/2 cups water
2 to 3 tbls Strawberry Jello
PIE CRUST
1 3/4 cups all purpose flour
1 tbls sugar
1/2 tsp salt
1/2 cup shortening
3 to 4 tbls ice cold water
WHIPPED CREAM
1 1/2 cups heavy cream
2 tbls confectioner's sugar
**Canned Whipped cream or Cool Whip work as well
