How To make Deep Dish Apple Cream Pie
2 1/4 c Flour
1 ts Salt
2/3 c Margarine
6 tb Ice water, may need 7 TB
1 c Sugar
1/2 ts Cinnamon
1/8 ts Nutmeg
8 c Apples, sliced and peeled
1 tb Lemon juice
3/4 c Heavy cream
Measure 2 cups flour and salt into a bowl. Cut in margarine with pastry blender until mixture resembles coarse meal. Stir in ice water; mix lightly. Form dough into a ball. Roll out 2/3 dough to fit a 10x6x2 inch baking dish. Transfer to baking dish. Combine sugar, remaining 1/4 cup of flour, cinnamon and nutmeg. Mix with apples and lemon juice. Pile into baking dish. Roll out remaining 1/3 pastry. Cover pie; seal edges and flute. Cut several large slits in top. Bake at 425~ for 40 minutes. Reduce heat to 350 ~. Remove pie from oven and pour cream through slits in top of pie. Bake 10 minutes longer. -----

Apples are in season so I made an apple pie this time!
I made three apple pies through trial and error.
We tried three different times to boil the apples for 10, 20, and 30 minutes.
The video footage shows an example of cooking apples for 30 minutes. This makes it look like apple jam, so I recommend simmering for 10-20 minutes.
A freshly baked apple pie with crème fraîche épaisse from France, clotted cream from England, and vanilla ice cream is very delicious.
I will show you how to make a simple apple tart with leftover pie dough at the end of the video.

Pie dish 21cm
◼Pie dough (brisée)
200g flour
3g (½ tsp) salt
30g sugar
130g cold unsalted butter
35g cold water
*Make two doughs with the ingredients above for the bottom dough and the top dough.
◼Filling
8-9 apples (1.35 kg apple slices)
75g unsalted butter
180g sugar
20-25g Lemon juice (Half a lemon)
◼Eggwash
1 egg yolk
15 g milk
➢Method
Put flour, sugar, salt and butter in a food processor and blend.
When it becomes sandy, add water and bring the dough together.
Fold the dough and chill in the refrigerator.
Melt butter in a pot, add apple slices, lemon juice and sugar, cover and cook for 20 minutes.
Take the lid off and boil down while stirring until the apples are completely dry, then let them cool.
Roll out the pie dough, place it in the mold, and add the apples.
Cut the pie dough into strips and place them on top of the pie.
Fold the outside of the pie dough into the mold.
Mix the egg yolk and milk, brush the pie and bake in a preheated oven at 200°C for 60-65 minutes. Bake in the bottom rack of the oven and cover with aluminum foil if the top burns.

How to Make a Deep Dish Apple Pie with Homemade Crust Recipe
Alyena will show you how to make this delicious deep dish apple pie with a flaky, homemade pie crust recipe. If you love apples, you will love this recipe because they are spiced with cinnamon, nutmeg, and ginger to give it the best flavor!
Instructions:
Preheat oven to 375
Apple Pie Crust Recipe:
2 cups of flour
2/3 cup of butter (cubed)
Mix in butter with flour using a fork or your hands
1 tsp of salt
5 to 7 Tbsps of cold water
Mix in and then form flour into a ball
Place in the refrigerator for 30 minutes
Apple Pie Filling:
6 to 8 apples (sliced)
The juice of 1/2 a lemon
1/2 cup of sugar
1/2 cup packed brown sugar
3 Tbsps of flour
1 tsp of cinnamon
1/4 tsp of nutmeg
1/4 tsp of ginger
Mix everything together
Cut dough in two and roll out. I for bottom and 1 for top.
Add bottom pie crust to pie pan
Fill with apple mixture
Add 1 Tbsp of chopped butter around apple pieces
Add top crust to pie. (We used the star shapes)
Give the top crust a butter wash
Sprinkle coarse sugar on top
Bake for 1 hour or until bubbly.
Feel free to cover pie if the crust is getting too brown.
