How To make Deep Dish Meat Pie
pastry for single crust pie 1 cup potato
chopped
1/2 cup onion :
chopped
3 tablespoons butter or margarine
1/3 cup all-purpose flour
1/2 teaspoon dried thyme, savory or sage -- crushed
1 1/4 cups beef broth
1 1/2 cups loose-pack frozen peas & carrots
2 cups cooked beef, pork, lamb or veal -- cubed
Prepare pastry. Roll pastry into a 12" circle. Cover and set aside. In a medium saucepan cook potato and onion in butter over medium heat, stirring constantly, for 5-6 minutes or till onion is tender but not brown. Stir in flour, herb and 1/8 teaspoon pepper. Add broth all at once. Stir in peas and carrots. Cook and stir till bubbly.
Stir in meat. Transfer mixture to a 1 1/2 quart casserole. Top with pastry; trim pastry to 1/2" beyond rim. Turn under and flute edges of pastry. Cut slits for steam. Place on a baking sheet. Bake in a 425F degree oven for 25-30 minutes or till golden. Let stand 10 minutes.

water
Note: The amount of water used varies depending on the humidity of where you live. You can also bake them as well.
Filling:
Minced meat
Sweet peppers
Spring onions
Onions
Carrot
Garlic
Tsp thyme
tsp bouillon
pepper
salt
oil for deep frying

1 diced onion
1 grated carrot
Add the onion and carrots to the pan and saute for about
5-8 minutes, until tende
minced meat 1 lb/500 g
mix well. cover and cook for 10 minutes
2 large eggs
plain yogurt 1/2 cup
mayonnaise 1 tbsp
stir everything together
All-Purpose Flour 1⅓ cups
baking powder 1 tsp
salt 1tsp
sugar 1 tsp
stir to combine
remove meat to a plate
dried garlic 1 tsp
salt 1/2 tsp
dry herbsSalt 1 tsp
Chili Pepper 1/3 tsp
put parchment paper on top of the pan
divide dough into two parts
put all the meat filling on the dough
Smooth the pastry over the top of the filling
Cover pan and simmer slowly until about 20 minutes
cook the pie on the other side for 15-20 minutes

Natchitoches Meat Pies
Dough
5 ¾ cups all-purpose flour
1 ½ tsp Kosher Salt
1 ¼ tsp baking powder
1 stick unsalted butter
2 eggs
1 ½ cups whole milk
Filling
Vegetable oil for frying
1 lb ground beef
1 lb ground pork
2 Tbsp Cajun or Creole Seasoning
1 tsp kosher salt
1 Tbsp all-purpose flour
1 cup small diced yellow onion
½ cup small diced green bell pepper
½ cup small diced celery
1 tbsp minced garlic
½ cup of beef stock
Optional: pepper jack cheese or cheddar or whatever cheese you like.
