Easy Crockpot Chicken Cordon Bleu
Happy Independence Day and long weekend, friends! While the 4th of July is often reserved for outdoor grilling, many of us across the US are experiencing some massive heat and humidity, so if you are in need of a heatwave break, check out this super simple crockpot chicken cordon bleu, with seven simple ingredients, plus your spices. Anyone who knows me knows I am far from the fancy end of the spectrum, but this recipe really does give off a fancy feel, and can be great for an evening meal, or a dish to make if hosting others.
Recipe (serves 4-6)
3-4 chicken breasts
1/2 lb. of semi-thick sliced ham
6-8 slices of swiss cheese
1 6oz. Package of cornbread stovetop stuffing
1 can of cream of chicken soup
1 stick of butter
1/4 cup of milk
1/4 tsp of salt and pepper mixed
1/4 tsp of garlic powder
1/2 tsp of oregano
Spray your crockpot and place the chicken breasts inside. Over the chicken layer the ham, and over the ham, layer the swiss cheese. Set aside.
In a separate bowl add the cream of chicken soup, milk, salt, pepper, garlic powder, and oregano. Mix all together, and then pour over the chicken, ham, and cheese in the crockpot. Spread evenly over all.
Pour the 6 oz box of cornbread stuffing over the top and then melt the stick of butter, and pour over all in the crockpot. Cook on low for 5 hours, which is the perfect amount of time to ensure with all the layers of food that the chicken gets cooked all the way through, but does not get too dry.
This chicken pairs great with a simple side salad and a white wine. Or really any summer drink of choice. Also, a little lemon squeezed on the chicken can add a refreshing twist.
