Chicken Cordon Bleu Casserole
Day 8 of the Casserole series
Chicken Cordon Blue Casserole
2 pounds chicken breast cut into bite size pieces
1 tbsp olive oil
1/2 pound ham diced
1 cup milk
1 cup heavy cream
1/2 tsp salt
1/2 tsp black pepper
2 tbsp Dijon mustard
2 cloves minced garlic
2 cups shredded Swiss cheese
4 tbsp butter -divided
2 tbsp flour
1 cup Panko breadcrumbs
1 pound short cut pasta
Preheat oven to 350°F.
Lightly grease a 9x13 casserole dish.
Cook your pasta in salted water 1 minute shy of what the box directs, reserving 1/2 cup pasta water in case you need to thin your sauce later.
Season the chicken with salt and pepper and Sauté the chicken in the oil over medium high heat 5-7 minutes. When it’s almost done add the ham in to crisp it.
Add the chicken and ham and pan juices to the drained, cooked pasta and mix.
In the skillet you cooked the chicken in, add the butter and garlic.
When melted, whisk in the flour and cook for 1 minute. Slowly whisk in the milk and cream and bring to a slow boil.
Add the shredded cheese and stir until melted.
Add in the Dijon mustard and more salt and pepper to taste. If the sauce seems too think add a little pasta water to it.
Pour the sauce in with the pasta and mix together. Pour everything into a greased 9x13 casserole dish.
Melt the other 2 tbsp butter in a pan, add the Panko and toast until golden brown, just a couple of minutes and sprinkle over the casserole.
Bake, uncovered, 15-20 minutes.

In this video I show you how to make a chicken cordon bleu. It's a super easy carnivore recipe and I hope you enjoy it!
RECIPE
4 Oz Deli Ham
4 Oz Swiss Cheese, Shredded
3 Large Chicken Thighs
1 tsp Salt
1/2 tsp Pepper
1/2 Cup Heavy Cream
2 Eggs
1/4 tsp White Pepper
1) Take the ham and give it a fine dice. Place into a bowl along with the swiss cheese and toss. Set aside.
2) Place a pan over medium high heat and add in the butter. Let melt. Once melted, place the chicken thighs into the pan and season with 3/4 tsp of salt and black pepper. Let sear on each side for 3-4 minutes or until well caramelized. Remove from the pan set aside to cool for 5 minutes. Once cooled, dice the chicken.
3) In a bowl, add the heavy cream, eggs, 1/4 tsp salt and white pepper. Whisk until homogenous.
4) Grab a 9x9 baking dish and add in all of the ham, swiss, and diced chicken and toss. Pour the custard around the dish to evenly distribute. Cover with foil and place into an oven at 350°F for 15 mintutes.
5) After the 15 minutes, remove from the oven. Remove the foil. Top this with 1/4 cup of ground pork rinds. Place back into the still hot oven for an additional 10 minutes to brown the pork rinds.
6) Once out of the oven, let rest for 5-10 minutes and serve.

5 cups cooked chicken, shredded
1 cup ham, cut into cubes
4 tbsp butter
1⁄4 cup flour
2 cups milk
1 tsp mustard
2 tbsp Parmesan
1⁄2 cup breadcrumbs
2 tbsp butter

Ingredient List:
• 2 lbs. Chicken breast (boiled, grilled, or baked)
• 1 tablespoon Carnivore Crisp Chicken Breast Flour
• 1 tablespoon Dijon Mustard
• 8 oz soften cream cheese
• 4 tablespoon melted butter
• 1 teaspoon onion powder
• 2 teaspoon garlic powder (or 3 cloves fresh garlic)
• ½ lemon juice
• 8-10 oz chopped ham
• 8-10 slices of Swiss cheese
• ¾ - 1 cup ground pork rinds
• Salt to taste
Instructions:
Preheat oven to 350 degrees
1- Cook chicken (I choose to boil for tenderness) while mixing other ingredients
In one large bowl:
2- Mix chopped ham, 4 slices of chopped Swiss cheese
3- Add 1 tablespoon chicken breast flour, 1 tablespoon Dijon mustard and melted butter
4- Add ½ lemon juice, garlic, and onion powder, mixing all ingredients
5- Add cream cheese in small chunks
6- Add warm/hot shredded chicken to bowl, mix
7- Add a few pinches of salt, taste test, add more salt if necessary
8- Place all contents into casserole dish
9- Place rest of Swiss cheese on top
10- Add pork rinds on top
11- Place in middle of oven @ 350 degrees for 20 minutes
12- Turn broiler on, move to top, broil for 1-3 minutes depending on your oven
13- Let cool then eat!
