4 ea Fillets white fish, 1 lb 1 ea Egg white 1 T Water 1/2 c Cornflake crumbs 1/8 t Lemon pepper 2 t Chopped fresh parsley 1 t Low fat margarine, melted Preheat oven 400F. Lightly spray a medium size shallow baking pan with vegetable spray. Rinse fish and pat dry. In small bowl, beat egg white with a little water. Dip fish in egg white, then roll in crumbs. Arrange fish in baking pan. Sprinkle with lemon pepper and parsley, then drizzle margarine over all. Bake uncovered 20 min or until fish flakes easily. Cal: 135; Fat: 2 g. -----

INGREDIENTS FOR CHIPS 2 Large russet potatoes 3 tablespoons of olive oil 1/2 teaspoon of garlic powder 1/2 teaspoon of paprika Salt and Pepper to taste INGREDEINTS FOR FISH 1 1/4 Pounds of Cod Fish 1 1/2 cups of panko 1 tablespoon of olive oil 1/2 cup of flour 2 eggs 1/2 teaspoon of garlic powder 1/2 teaspoon of paprika 1 teaspoon of Italian seasoning salt and pepper to taste
Directions 1. Cut potatoes into 1/4 inch chip slices, place all the cut potatoes in a large bowl with cold water place in fridge for 2 hours or more to remove starch. 2. Drain the water and completely dry all the potatoes coat the with half of the oil and the garlic powder, paprika and salt and pepper. 3. Add the rest of the oil to the pre heated sheet pan and add the potatoes in one single layer. Place in a preheated 425 degree oven for 15 minutes then flip and brown the other side for 15 minutes. 4. While the potatoes are baking , add olive oil to skillet and brown the panko for 6 to 7 minutes on medium heat. While panko is browning add Italian seasoning, garlic powder, paprika and salt and pepper to taste. 5. Set up dredging stations with 3 bowls, one with flour and salt, one with beaten eggs and salt. The last bowl with the browned panko. First take you Cod fish dredge in flour then completely immerse in eggs, then pack the panko on and press down. 6. Place on Wire rack and bake at 425 degrees for 15 minutes. Serve with your favorite Tartar sauce or cocktail sauce
