How To make Halibut Baked with Herbs
6 Portions halibut steaks
-OR- 1 2 lb. fillet
3 tb Butter or margarine; cut up
3 tb Lemon juice
HERB MIX NO. 1:
1 ts Onion flakes
rehydrated and drained 1 ts Dry mustard
1/2 ts Oregano leaves
1/4 ts Marjoram leaves
1 ts Paprika
1 ds Pepper
:
HERB MIX NO. 2------------------------------- 1/2 c Rice chex; crushed finely
1/2 c Instant potato flakes
1/3 c Grated parmesan cheese
- (freshly grated) 1 ts Sweet basil
1/2 ts Garlic powder
1/4 ts Pepper
1 tb Parsley flakes
1/4 ts Paprika
Wipe fish with a damp cloth, dot with butter, and sprinkle lemon juice over all. Use either of the spice mixes shown below. Herb Mix No. 1: Prepare onions and sprinkle over the top of the fish. Combine the remaining herbs/spices and sprinkle on halibut. Let stand for 10 minutes to absorb the flavors. Bake at 350 F. for 20 minutes or until fish flakes easily with a fork. Serves 6. Herb Mix No. 2: Mix all ingredients together well. Sprinkle over fish; use only enough to lightly cover fish or it will taste dry. (The remaining mix will store well in a tightly covered jar in the refrigerator.) Bake at 350 degree F. for 20-30 minutes or until fish flakes easily with a fork. Do not overbake or it will dry out. Halibut is one of my all-time favorite fish. However, there are many ways to prepare it, so I decided to find out which of my favorite sauces goes with one of my favorite fish.
PRINT THE LEMON BUTTER HALIBUT RECIPE AT:
Ingredients for this recipe:
• 2 8-ounce fresh skinless halibut fillets
• 2 tablespoons oil
• 5 tablespoons + 1 teaspoon unsalted butter
• ½ peeled and small diced shallot
• 1 finely minced garlic clove
• ¼ cup white wine
• 1 tablespoon minced fresh dill
• Juice of ½ lemon
• Salt and pepper to taste
PRINT THE CHIMICHURRI HALIBUT RECIPE AT:
Ingredients for this recipe:
• 2 8-ounce fresh skinless halibut fillets
• 2 tablespoons oil
• 1 teaspoon unsalted butter
• 1/2 chimichurri sauce recipe
• Salt and pepper to taste
PRINT THE SOY GLAZE HALIBUT AT:
Ingredients for this recipe:
• 1/3 cup soy sauce
• 2 teaspoons rice wine vinegar
• 3 tablespoons honey
• 1 teaspoon peeled and finely grated fresh ginger
• 1 finely minced garlic clove
• 2 8-ounce fresh skinless halibut fillets
• 2 tablespoons sesame seeds
• 2 tablespoons sesame oil
• 1 teaspoon unsalted butter
• Sliced green onions for garnish
• salt and pepper to taste

This herbs crusted halibut recipe with fresh pasta and roasted vegetables is relatively easy to make but will will launch your cooking credentials to gastronomic stardom. You will be the envy of family and friends. The combination of the delicate but flavorsome fresh herbs crusted halibut and a simple fresh pasta is delicious. If you have no access to fresh halibut you can use any other firm white fish where you can relatively thick steaks or fillets from. You can even use salmon.

- 2 firm white fish fillets ( halibut, flounder, cod, mahi,mahi)
- 1 slice white bread
- 100gr butter
- handfull of mixed fresh herbs ( tarragon, basil, parsley, chervil, dill, thyme)
- 20gr pinenuts or cashews
- 300gr fresh pappardella
- 2 shallots
- 1 courgette/zuchini
- 8 asparagus
- 8 baby marzano tomatoes
- 1 small fennel bulb
- olive oil
- salt
- pepper
- 50gr butter
