Cake:
3 eggs
1.5 cups granulated sugar
1/2 cup packed brown sugar
3/4 cup butter softened
1 teaspoon vanilla
2 cups all-purpose flour
16 oz fresh cranberries sliced in half
zest of 1 orange
Crumb Topping:
3/4 cup all-purpose flour
6 tbsp. packed brown sugar
6 tbsp. butter
Orange Glaze:
1 cup powdered sugar
Juice from 1 orange about 4 tsp.
Instructions
Preheat oven to 350 degrees. Using a stand mixer, beat the eggs with the sugars about 5 minutes. It should be thickened and about double in size. Add the butter and vanilla; mix about two more minutes. Stir in the flour until just combined. Add the cranberries and orange zests and fold in till completely combined. Spread batter into a greased 13x9 pan.
In a small bowl, combine crumb topping ingredients with fork until coarse crumbs form. Spread over batter. Bake for 40-50 minutes until a toothpick inserted in center tests done. It should be a golden brown. Mine took about 44 minutes to cook.
Let cool completely. Then combine glaze ingredients and drizzle over cooled cake.

Cranberry-Nut Coffee Cake
Ingredients:
¼ cup brown sugar, packed
½ cup walnuts, chopped
¼ tsp. cinnamon
2 cups Bisquick baking mix
2 tbsp. granulated sugar
1 egg
2/3 cup milk
2/3 cup whole cranberry sauce
Confectioners’ sugar icing
Preheat oven to 350 degrees F. Grease 9x9x2 inch square pan. Mix brown sugar, walnuts and cinnamon. Set aside. Combine baking mix, granulated sugar, egg and milk. Beat vigorously ½ minute. Spread in pan; sprinkle with nut mixture. Spoon cranberry sauce over top. Bake 20 to 25 minutes. While warm, spread with confectioners’ sugar icing.
Make the icing:
1 cup confectioners’ sugar
½ tsp. vanilla
1 tbsp. water (about)
Blend ingredients, drizzle over the top.

●1 teaspoon vanilla extract

A great tasting easy to bake cake:
1 1/2 cup butter or margarine room temperature.
1 1/2 cup granulated sugar
3 eggs room temperature
1 1/2 cups buttermilk
1/2 teaspoon vanilla
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
1 or two cans of whole berries cranberry in a can Cake in video was made with 1 total can : 1/2 can used for filling the other 1/2 for top
Glaze: Optional: 1 1/4 cups powder sugar, 3 Tablespoons of milk till smooth drizzle over cake

In a large bowl beat butter, sugar till smooth and combined. Beat in eggs, then milk,vanilla till all combined. Add dry ingredients flour, baking powder, baking soda, and salt. Mix till smooth and combined.
Pour into a 13 x 9 greased pan Use half of the batter to fill pan, Spread half of the berries over batter and smooth with knife. Put rest of berries over batter of cake.. With knife swirl batter Sprinkle 1 cup your choice of chopped nuts evenly over batter. Bake at 350 for 40-50 minutes Cool cake on cooling rack and then apply glaze optional:
CHRISTMAS CRANBERRY SWIRL COFFEE CAKE
I thought I'd taped the cutting of the cake but didn't so the end is just caption.
There are a few steps to this one but it is well worth it
I use a bundt pan sprayed with Pam
Set the oven at 350 degrees
1/2 cup softened butter
1 cup sugar
2 large eggs, room temperature
1 teaspoon almond extract
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1/3 cup chopped walnuts
1 can (14 ounces) whole cranberry cranberry sauce
Glaze:
3/4 cup powdered sugar
2 tablespoons milk (I used maybe 1-1 1/2
1/2 teaspoon vanilla extract
In large bowl, cream the butter and sugar until light and fluffy.
Add 1 egg at a time, beating well after each addition.
Stir in the almond extract.
Combine the flour, baking powder, baking soda, and salt in a separate bowl.
Add creamed mixture alternately with sour cream, beating well after each addition.
Batter will be thick
Sprinkle walnuts into greased 9 inch bundt pan. Spread one third of the batter over chopped nuts; top with half the cranberry sauce. Repeat layers ending with the final third of batter.
Bake at 350 degrees for 50-55 minutes or until a toothpick inserted in the center comes out clean
Cool for 10 minutes before removing from pan to a wire rack to cool completely.
Combine the glaze ingredients and drizzle over the coffee cake

Spiced Cranberry Coffee Cake
Spiced Cranberries:
4 cups fresh or frozen cranberries
2 cups water
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon orange zest
Coffee Cake:
3 cups all-purpose flour, plus more for coating baking dish
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 1/2 sticks unsalted butter, plus more for greasing baking dish
1 1/2 cups granulated sugar
1 1/2 cups low-fat buttermilk
3 large eggs
2 teaspoons orange zest
2 cups spiced cranberries, divided
1 cup walnuts, roughly chopped
Icing:
1 1/4 cups confectioners sugar
3 tablespoons milk
For Spiced Cranberries:
1.Combine all the ingredients in a large saucepan over medium high heat. Bring to a boil and cook until the cranberries just begin to burst. Reduce to a simmer and continue to cook cranberries 30 more minutes, until the sauce is rich and thick. Remove from heat and let cool.
For Coffee Cake:
1.Preheat oven to 350F.
2.Coat a 9x13 inch baking dish with butter and dust with flour.
3.In a medium bowl whisk together the flour, baking powder, baking soda and salt.
4.Using an electric mixer fitted with the paddle attachment beat the butter and sugar until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl to combine everything.
5. In a medium bowl whisk together the buttermilk, eggs and orange zest until combined.
6.Add the dry ingredients into the butter and sugar mixture and beat on low speed. Slowly add in the buttermilk mixture until the batter just comes together.
7.Evenly pour and spread half of the batter into the prepared baking dish, scatter half of the spiced cranberries over top. Add the remaining batter over the cranberries, evenly smoothing the top with a rubber spatula and repeat with remaining spiced cranberries on top. Sprinkle walnuts all over the top of cake.
8.Bake until the cake is golden brown and a toothpick inserted into the center comes out clean, 45 to 50 minutes. Let cool for 5 minutes.
For Icing:
1.Whisk together the confectioners sugar and milk until smooth. Drizzle the icing over the warm cake. Serve warm or at room temperature.
Serves 6-8
