1/2 c Chopped cranberries (raw) -OR- blueberries 1/4 c Honey or maple syrup 2 tb Unrefined vegetable oil 3/4 c Orange juice 1 c AM Oat Bran 1 c AM Whole Wheat Pastry Flour 1 tb Non-alum baking powder (Yield: 12 large or 24 mini-muffins) Place berries, honey, oil, orange juice in blender and blend slightly. Mix dry ingredients. Add liquid to dry and mix. Fill oiled muffin tins and bake at 400 F. for 20 to 25 minutes or until nicely browned. The smaller muffins rise better. Leftover Cranberry Sauce Muffins with Oat Streusel Topping
Don't know what to do with all those leftovers after your Thanksgiving feast? Well, you don't need to throw away that delicious cranberry sauce because there is a genius solution. Turn that sauce into delicious, leftover cranberry sauce muffins with an oat streusel topping and enjoy it for breakfast or dessert the next day.
#90 Cranberry Oatmeal Muffins – oven 400 degrees • ½ cup flour • ½ cup almond flour • ¼ cup brown sugar • ¾ cup buttermilk • ½ cup jellied cranberry sauce from a can • 1 cup old-fashioned oatmeal • 1 egg beaten • ¼ cup avocado oil • 1 teaspoon baking powder • ½ teaspoon baking soda • 1 ½ teaspoon cinnamon (optional) • ½ teaspoon salt
Instructions Makes about 12 muffins. Combine oatmeal and buttermilk in medium bowl and let stand 30 minutes. Spray muffin pan. Blend brown sugar, avocado oil, egg, and cranberry jelly into oatmeal mixture. Use fork to really break up cranberry jelly. Add flour, almond flour, baking powder, baking soda, salt and cinnamon. Blend lightly. Spoon into muffin cups using ¼ cup measuring cup as a scoop and level it off so all muffins are equal in size. Bake no more than 20 minutes; use toothpick to test at 16 and 18 minutes.

This easy recipe uses only pantry staples, and I modified it to make use of leftover cranberry sauce and cream cheese.
I omitted the sugar to compensate for the fruit topping. In part 2 I show the finished product and results of the experiment.
