This Cranberry Muffins recipe is easy-to-follow, healthy, and wholesome. So why not give it a try? Ingredients:
2 cups all purpose flour
1/2 cup white sugar
1/2 cup vegetable oil
3/4 cup milk
2 eggs
1 1/ tsp. almond extract
2 tsp. baking powder
1/2 tsp.baking soda
1/2 tsp. salt
2 cups frozen or fresh cranberries
vanilla sugar (for toppings)
Procedure:
1. Preheat oven to 175C (350F).Line muffin pan with muffin liners.
2.Whisk flour, sugar,baking powder, baking soda and salt.
3.Add the milk,vegetable oil, eggs,and almond extract, and whisk everything until well blended
4.Add the cranberries and fold to combine.
5.Divide the batter into the muffin pan evenly and top with vanilla sugar.
6.Bake for 25 mins.
7.Allow to cool down in the muffin pan before removing and transferring to a wire rack to completely cool.

Cranberry Muffins
1 cup dried cranberries soak in water for at least 30 minutes.
2 1/2 cup all purpose flour
2 tsp baking powder
1 tsp salt
3/4 cup granulated sugar
1/4 cup veg. oil
2 large eggs
2 tsp vanilla extract
250 fresh milk
1/4 cup lemon juice
Streusel Topping:
1/2 cup all purpose flour
2 tbsp butter
3 tbsp sugar
Bake in a preheated oven at 400 degrees Fahrenheit for 25 minutes.

¾ cup granulated sugar (150g)
2 Tablespoons cornstarch
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup sour cream (180g)
½ cup unsalted butter, melted (113g)
⅓ cup orange juice (78ml)
2 Tablespoons orange zest
1 large egg
1 ½ cups fresh cranberries (167g)
Additional granulated sugar, for sprinkling

00:20 Preheat your oven to 425F (220C) and line a 12-count muffin tin with paper liners (or make my parchment paper liners and use them). Set aside.
01:54 In a large mixing bowl, whisk together flour, sugar, cornstarch, baking powder, baking soda, and salt.
02:29 In a separate medium sized mixing bowl, whisk together sour cream, melted butter, and egg until well-combined.
03:25 Add orange juice and zest to the sour cream mixture and whisk well.
03:40 Pour the wet ingredients into the dry ingredients and use a spatula to gently fold the wet and dry ingredients together until about just about 50% combined, then add cranberries and continue to gently fold until cranberries are well distributed and you have a uniform batter (batter will be thick, do not over-mix or your muffins will be dense).
05:10 Evenly divide batter into your prepared muffin tin and sprinkle tops with additional granulated sugar.
05:47 Bake in the center rack of 425F (220C) oven for 8 minutes, then without opening the oven door, reduce the oven temperature to 350F and bake for another 8-10 minutes, until a toothpick inserted in the center of the muffin comes out clean or with a few moist crumbs.

How to make Orange Cranberry Muffins
These muffins are so moist and bursting with fresh cranberries and sweet orange flavor! Definitely on my list of favorite fall muffins!!
Grease a jumbo sized muffin pan with olive oil cooking spray. Preaheat oven to 400 degrees.
Dry Ingredients:
2 1/4 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
Combine all dry ingredients and whisk together.
Wet Ingredients:
1/2 cup unsalted butter (room temp)
1/2 cup white sugar
1/2 cup light brown sugar
2 lg eggs (room temp)
1/2 cup buttermilk (room temp)
1 TBSP vanilla
zest of 2 oranges
2 TBSP fresh orange juice*
2 cups fresh cranberries
In large bowl cream butter and sugars together. Add eggs one at a time, beating after each addition. Add buttermilk and vanilla. Cream together. Add zest, juice, and cranberries. Stir with a spatula until mixed together.
Combine dry into wet ingredients. Fold together until combined.
Fill each muffin tin to the very brim. Sprinkle with pure cane sugar on top of each one. Bake at 400 degrees for 5 minutes. Reduce to 375 degrees for 18-20 minutes more. Store in an airtight container for up to 5 days. Enjoy!!
