Deliciously Tangy and Irresistible Easy Cranberry Muffin Recipe : Yields : 9 to 10 muffins (Measuring cup size - 250 ml)
All-purpose flour (Maida ) - 1 cup (approx 125 grams) Dried Cranberries - 1/2 Cup Walnuts - 2 tbsp Corn flour - 2 tbsp Eggs - 2 Whole Sugar (granulated) - 1/2 cup Milk - 100 ml Butter - 4 tbsp (approx 60 grams) Baking Powder - 1 tsp Vanilla Essence - 1/2 tsp A pinch of salt if using unsalted butter Muffin Cups or liners - 9 to 10

2 1/2 cups flour 2 tsp baking powder 1/4 tsp salt 1/2 cup butter (unsalted) 1 1/4 cups sugar 2 eggs 1/2 cup milk 1 orange (1 tsp zest and the juice from orange) 2 cups cranberries (cut in pieces)

BETH’S CRANBERRY WALNUT MUFFINS Makes 12
INGREDIENTS: 3 eggs ½ cup (120 ml) unsalted butter, melted 1 cup (200 g) sugar 2/3 cup (160 ml) water zest of 1 orange (about 2 tsp (10 ml)) 1 ¾ cup (210 g) flour ½ tsp (2.5 ml) salt 2 tsp (10 ml) baking powder ½ tsp (2.5 ml) ground cloves 1 cup (150 g) fresh cranberries ½ cup (75 g) walnut pieces
METHOD: Preheat oven to 400F (200C).
In a large bowl combine eggs, butter, sugar water and zest. Whisk to combine.
In a smaller bowl combine flour, salt, baking powder, cloves. Whisk to combine.
Slowly add the dry ingredients to your wet ingredients, until combined. Add cranberries mix gently until incorporated.
Place muffin papers in a muffin tin, and scoop out batter filling ¾ of the way full. CLICK HERE TO FIND TULIP PAPERS:
Then top with walnuts.
Bake for 15-17 mins until muffins have risen and are golden brown.
