How To make Cranberry Hazelnut Bread
1 1/2 c All purpose flour
1 ts Ground cinnamon
1/2 ts Baking powder
1/4 ts Baking soda
1/4 ts Ground cloves
1 c Dried cranberries, dried
-pitted cherries, or Snipped dates 1/2 c Dried blueberries OR raisins
1/3 c Chopped hazelnuts OR pecans
2 Eggs
3/4 c Packed brown sugar
1/2 c Orange juice
1/3 c Cooking oil
Brandy Grease bottom and sides of four 4 1/2 x 2 1/2 x 1 1/2-inch loaf pans. (Greasing the sides only partway up will result in nicely rounded tops and prevent unwanted rims along the edges.) Set aside. In a large mixing bowl, stir together flour, cinnamon, baking powder, baking soda, and cloves. Add cranberries or cherries, blueberries or raisins, and hazelnuts or pecans. In a medium mixing bowl, beat eggs; stir in brown sugar, orange juice, and cooking oil. Stir into fruit mixture. Spoon about 3/4 cup of the batter into each pan, stirring batter often. Bake loaves in a 300 degree F oven about 40 minutes or till a toothpick inserted near the center of each loaf comes out clean. Cool the loaves in the pans on wire racks for 10 minutes. Remove loaves from pans. Cool thoroughly on wire racks. Wrap loaves in brandy-moistened cheesecloth. Over-wrap with foil. To mellow flavors, store in the refrigerator for up to 8 weeks. Remoisten cheesecloth with about 1 Tablespoon of brandy once a week or as needed. Makes 4 loaves, 8 servings each. Cranberry Hazelnut Pie:
•1 9” pie crust
•3 egg whites
•1/2 cup sugar
•1/2 cup finely ground hazelnuts (or almonds)
+ optional: 1/2 tsp. cinnamon, 1/4 tsp. salt
•8 oz. whole cranberries
•10 oz. jar orange marmalade*
♦️ Bake pie crust at 375F for 12-15 min. until lightly browned along edges; set aside.
♦️ Whip egg whites to soft peaks. Add sugar and whip to stiff peaks. Fold in nut flour (and cinnamon/salt) until combined.
♦️ Pour cranberries into pie crust; top with jam and spread evenly to cover. Top with meringue and swoop decoratively with a spoon. (Optional: dust with 2 Tbs. confectioners’ sugar)
♦️ Bake for 45-50 min. until the meringue is set

In this video I'll bake two loaves of cranberry walnut sourdough bread to find out which method works best when adding inclusions. I'll make one batch by adding the inclusions during the initial bulk fermentation, during the second set of stretch and folds. Then, I'll add the cranberries and walnuts to the second loaf during the final shaping. I want to see if adding the inclusions during bulk fermentation affects the gluten formation and structure of the crumb.
I did not include the recipe for the Cranberry Walnut bread in this video however, I will post the full recipe tutorial in a future video. I will include a link to a recipe and tutorial on how to make sourdough bread for beginners below:

Cinnamon Raisin Bread (No Knead)

INGREDIENTS
3 cups (375g) all-purpose flour
½ tsp active dry yeast
1½ tsp salt
1½ tbsp granulated sugar
2 tsp cinnamon
3/4 cup (120g) raisins
3/4 cup (188g) milk
3/4 cup (188g) water
INSTRUCTIONS
1. In a large bowl whisk together the flour, yeast, salt, sugar, raisins, and cinnamon.
2. Pour in the milk and water, and stir it in with a wooden spoon until your dough forms a ball.
3. Cover the bowl with plastic wrap and leave on the counter for over about 12-15 hours (no less than 12 hours, it needs this time to grow)
4. After this time you will see your dough is sticky, boozy and has at least doubled in size.
5. Scrape your dough out of the bowl and onto a floured surface and fold it two times on itself, kind of like a book
6. Roll your dough into a round ball or ‘boule’ getting it nice and smooth on the bottom
7. Let rise for 1 hours at room temperature covered with a floured tea towel. It might take longer than an hour. It will rise and grow, and also spread out a little too
8. Bake in a HOT oven at 400oF (200oC) for 45/50 minutes. To get a crispy, thick crust KEEP THE OVEN DOOR CLOSED DURING BAKING, please.
9. Let cool completely before devouring.
