How To make Cranberry Fruit Nut Bread
2 cups flour -- all purpose
1 cup sugar
1 1/2 teaspoons Baking Powder,Double-Acting
1/2 teaspoon Baking Soda
1 teaspoon salt
1/4 cup Shortening,Vegetable
3/4 cup Orange Juice,Fresh
1 tablespoon Orange Peel,Grated
1 egg -- well-beaten
1/2 Cup nuts
chopped
1 1/2 Cups cranberries :
coarse chop
Sift together flour, sugar, baking powder, soda and salt. Cut in shortening until mixture resembles coarse cornmeal. (Do in food processor?) Combine orange juice and peel with beaten egg. Pour all at once into dry ingredients, mixing just until dampened. Carefully fold in nuts and cranberries. (If frozen cranberries are used, put through food chopper in frozen state) Spoon into greased loaf pan (9x5x3) . Spread corners and sides slightly higher than center. Bake in 350 degree oven for about 1 hour, until crust is golden brown and toothpick inserted comes out clean. Remove from pan and cool. Store overnight for easier slicing.
This is the original Ocean Spray recipe and is delicious. I sometimes add a coupe of tablespoons of chopped dried apricots to this.

Cranberry Orange Walnut Quick Bread
Pumpkin bread is okay. But the real bread that says fall and screams Happy Holidays! is this cranberry orange walnut quick bread. There's no yeast and no rise times to wait on and cranberries are in season now, so grab a bag and get baking!
I think it's really more like a pound cake, but don't tell anyone. The texture is so moist. You'll see that in the video.
Frozen cranberries are fine here--dried ones won't give the same effect.
Use a real orange for the biggest punch of flavor.
Make your own buttermilk with a bit of lemon juice in your milk if you don't have any on hand, or swap in plain yogurt or sour cream diluted with a bit of water to make the same amount of buttermilk called for.
Gluten free 1:1 flour works great here if you need it.
Ingredients:
- 4 ounces cream cheese softened
- 1 cup sugar you can swap coconut sugar if you choose
- 1 egg
- 1 teaspoon vanilla
- 2 cups all purpose flour gluten free flour blends like King Arthur 1:1 works here too
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup buttermilk
- 3 tablespoons orange juice
- 1/4 cup flavorless oil like avocado you can use vegetable oil if you choose
- 1 cup fresh cranberries washed, stems and squishy ones removed
- 2 tablespoons cold butter
- 1/4 cup brown sugar
- 1/3 cup walnuts chopped

No-Knead Cranberry-Walnut Bread! Perfect 18-Hour Loaf!
No-Knead Cranberry-Walnut Bread
You will need:
3 cups of all purpose or bread flour
1/2 teaspoon of active dry yeast
1 teaspoon of salt
1 teaspoon of sugar
2 teaspoons of oil
1 1/2 cup of cold water
1 cup of chopped walnuts
1 cup of dry cranberries
Combine all dry ingredients.
Add walnuts and dry cranberries. Mix well.
Add oil to water and add to dry ingredients.
Using handle of long kitchen spoon mix all ingredients.
Do not knead the dough.
Cover mixing bowl and let proof for 18 hours.
Better to make your dough in the evening and bake your bread in the morning.
After the dough has been proofing for 18 hours take it out on a flour surface, shape into a loaf and put it either in a clay pot or cast iron pot.
You do not need to preheat the oven when baking in a clay pot.
Put your bread into a cold oven, set the temperature for 475 degrees Fahrenheit and set the cooking time for 45 min. Keep your clay pot covered. In 45 min, remove lid of your clay pot and let bake for another 5 min for bread to form the crust on the top.
Take it out . Let cool for couple minutes.
You can use cast iron pot to bake your bread. For cast iron pots: baking time is 30 min in preheated oven (covered) and 15 min (uncovered).
