How To make Cranberry Bran Muffins
1 1/4 c Low-Fat Milk, at room
-temperature 1 1/2 c All-Bran Cereal
1 Egg
1/4 c Unsulphured Molasses
1/4 c Canola or Olive Oil
1/4 c Pure Maple Syrup
1 c Whole Wheat Pastry Flour*
1/2 c Cake Flour (not self-rising)
1/2 c Wheat Germ
1 tb Baking Powder
1/4 ts Salt
1/2 c Walnuts, coarsely chopped
1 c Cranberries, finely chopped
Preheat the oven to 450 F. Spray 12 3-inch muffin cups with cooking spray. In a small bowl pour the milk over the bran cereal and let it soften. In a large bowl beat the egg well. Add the molasses, olive or canola oils and maple syrup, and mix thoroughly. In another bowl combine the wheat pastry and cake flours, wheat germ, baking powder and salt and stir to blend. Add the walnuts and cranberries and mix well. Fold the milk-soaked bran into the egg mixture, mixing well. Pour the bran mixture over the dry ingredients, and blend thoroughly. Spoon the batter into the muffin cups, filling each one to the top, and bake for 20 to 25 minutes.

Hi there and welcome to my channel. In this video, I'm showing you how to make a copycat of Mimi's Honey Bran Muffins. I loved the muffins Mimi's used to offer but they stopped selling them years ago. Well, can I just say that these are even better?? Give them a try and let me know if you agree.
Ingredients:
2 cups raisin bran cereal, processed in the food processor to make about 1 cup
½ cup milk
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup brown sugar (light or dark will work – I used light)
1/4 cup honey (Sorry! I said 1/2 cup in the vid!)
2 tablespoons molasses
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 tablespoon grated orange zest
GLAZE:
3 tablespoons sugar
3 tablespoons brown sugar, packed
4 tablespoons butter, melted
2 tablespoons honey
1 teaspoon water
Makes 12 muffins*Bake 350 F for 15-20 minutes

Cranberry Walnut Bran Muffins
• 2 cups (240 grams) oat bran
• ½ cup (56 grams) walnuts
• ½ cup (80 grams) reduced sugar dried cranberries
• 2 teaspoons baking powder
• pinch of salt
• 1 tablespoon cinnamon
• Additional sweetener to taste is desired
• ½ cup (123 grams) unsweetened applesauce
• 1 cup (8 ounces) cashew milk
• ½ cup (4 ounces) honey
• 1 egg
Preheat oven to 400 F. Combine all dry ingredients in one bowl and wet ingredients in a separate bowl. Mix the contents of both bowls until well blended then add wet to dry whisking until fully blended. Spay muffin tin with nonstick cooking spray and evenly distribute mixture. Place in preheated oven for 10 minutes after first 10 minutes reduce heat to 350 and bake for an additional 10 minutes for a total of 20 minutes. Remove and allow to cool. Should make 12 muffins. Nutrition info per muffin for this exact recipe are: 178 calories, 4.7 grams fat (0.7g saturated fat, 2.3g polyunsaturated fat, 0.6g monounsaturated fat), 32 grams carbs, 5.7 fiber, 5 grams protein
