Viral Corn Casserole Recipe
4 INGREDIENT SCALLOPED CORN! A REALLY RETRO HOLIDAY
Today we are taking a card from Rick's mother's recipe box with this retro classic, scalloped corn. True to their Indiana roots, this easy, 4 ingredient casserole is a timeless, midwestern classic. I consulted my mother in law, Judy for instructions on how to make this and while the instructions were somewhat vague, I winged it and came out the other side winning. Rick says this is exactly as he remembered. SCORE! This is super easy and you can adjust it to feed two or two hundred. Just adjust your ingredients and you should be good to go! This is sweet, savory and full of corn flavor with a crunchy, buttery topping that I know you will love!
This all starts with two cans of creamed corn. Pour one into the bottom of a buttered baking dish. I used a small one. An 8 inch cake pan should do, or even a pie dish would be fine too! Cover the corn with a layer of cracker crumbs. I am using saltine crackers. Next time I am going to use a buttery cracker like a Club or a Ritz cracker. Next I drizzled over half a stick of melted butter and sprinkled 2 tablespoons of granulated sugar over that.
Next layer we repeat the first layer (makes me want to sing second verse same as the first.) I sprinkled a thicker layer of cracker crumbs on the top so that we would have a nice crunchy layer. Drizzled with the rest of the butter and sprinkled with a bit more sugar. I also added salt and pepper into each layer, but the salt was not necessary. Next time I will leave it out. The crackers are salty enough. Honestly, you could leave out the sugar as well, considering that the creamed corn has sugar in it. Your choice.
Bake this in a 350 degree oven for 45 minutes. I checked mine at 30 minutes and found the top was not buttery enough so I placed 2 more tablespoons of butter on it and put it back in the oven for an additional 15 minutes. This came out perfectly! Sweet, savory and surprisingly not runny because I was honestly suspect that without the addition of eggs this would be a runny mess. But it wasn't and everyone enjoyed it a lot!

Delicious Corn Casserole // Side Dish with Tips Step by Step❤️
When it comes to a side dish, this CORN CASSEROLE is on the top of my list of favorites. This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

1 Package Corn Bread Muffin Mix
1 Can 14.5 Cream Style Canned Corn
2 1/3 Frozen Whole Kernel Corn
1 Cup Milk
2 Tbls Melted Butter
1 Tsp Salt
1/2 Tsp Ground Nutmeg
Behind the Scenes: Farm to Table Dinner | Corn Casserole Recipe

Logan Family Farms Scalloped Corn Casserole
3 Tbsp. unsalted butter, plus more for buttering casserole dish
1 red bell pepper, diced
1 sweet onion, diced
2 Tbsp. all purpose flour
2/3 c. milk
2 c. fresh sweet corn kernels
1-15 oz. can creamed corn
6 slices white sandwich bread
1 stick unsalted butter, melted
Chopped cilantro for garnish
Preheat oven to 350*. In a large skillet, melt 3 Tbsp. of butter over medium heat and add the diced red bell pepper and onion. Sauté until the veggies start to soften. Sprinkle 2 Tbsp. flour over the peppers and onions and stir to coat. Pour in 2/3 c. milk and stir to combine. Cook, stirring until the sauce is thick and smooth (you can always add a little extra flour if your sauce is still runny). Add in the creamed corn and fresh corn kernels. Stir everything to combine. Butter the inside of a 9x13 in. glass baking dish. Pour the corn mixture into the baking dish. Cut the bread into ½ in. cubes and toss in the melted butter until they are evenly coated. Sprinkle the buttered bread cubes all over the surface of the corn casserole. Bake at 350* for about 45 minutes or until bubbling. (If the bread starts to get too brown, cover with foil and allow the casserole to finish baking.) Garnish with fresh cilantro, if desired. ENJOY!

Cheesy Scalloped Corn with Michael's Home Cooking
I have been making this Scalloped Corn Casserole or Cheesy Scalloped Corn for over 25 years, one of my favorites.
Ingredients:
1 can (15oz) whole kernel corn (drained but save 1/4 cup liquid
I can (15oz) cream style corn
1 or 2 tablespoons dried onion flakes
1/2 stick butter melted (2 ounces or 4 tablespoons)
3 eggs beaten
2/3 cup cream (or light cream or tinned/canned/evaporated milk)
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups shredded mild cheddar cheese or colby cheese... (you can use only 1 cup if you like)
about 1 1/2 cups of saltine crackers crushed slightly
Mix all together and place into a 1 and 1/2 quart baking dish or larger.
Bake 350 for about 55 minutes.
I make this around holidays and special occasions or when I am baking something.
