• 2 cups frozen corn kernels
• 2 (15 ounce) cans black beans drained and rinsed
• 2 medium roma tomatoes diced
• 1 medium red bell pepper diced
• 1 large avocado diced
• 1/2 small red onion minced
• 1/2 cup freshly chopped cilantro
• 1/4 cup lime juice
• 1/4 cup extra virgin olive oil
• 2 cloves garlic minced
• 1/2 teaspoon salt
• 1/2 teaspoon red pepper flakes

Black Bean and Corn Salad - Lynn's Recipes
A great salad recipe for a cookout or picnic. This is a healthy salad that can be made ahead and refrigerated. If the chipotle chili powder is too spicy for your taste, substitute regular chili powder or reduce the amount of the chipotle chili powder.
Black Bean and Corn Salad
1 Tablespoon apple cider vinegar
1 Tablespoon lime juice
1 Tablespoon olive oil
1 Tablespoon chipotle chili powder
¼ teaspoon salt
¼ teaspoon ground pepper
1-15 ounce can black beans, drained and rinsed
1-1/2 cups corn kernels, frozen and defrosted, canned and drained or fresh off the cob
1 tomato, chopped
½ red onion, chopped
½ cup cilantro, chopped
Mix beans, corn, tomato, onion and cilantro in a bowl. Whisk remaining ingredients together and pour over. Toss well to coat.

NAVAJO GRANDMA'S BLACK BEAN AND CORN SALAD INGREDIENTS:
MIX IN A MEDIUM BOWL:
1 Cup corn
1 (15 oz) can Black Beans, drained, rinsed
2 Roma Tomatoes, diced
1 Red Bell Pepper, diced
1-2 Large Avocado, diced
1/2 small red onion, diced or minced
1/2 Cup freshly chopped Cilantro
WHISK THE FOLLOWING IN A SMALL BOWL:
1/4 Cup Lime juice (2 limes) 6 tsp
1/4 Cup Extra Virgin Olive Oil, 6 tsp
1 Clove Garlic, minced
1/2 teaspoon salt
1/2 teaspoon Red Pepper flakes
Pour over and mix into fresh black bean/corn salad
Serve with Naneeskadi (frybread dough baked in a skillet or grilled)
Serve fresh, ENJOY!!!

Serves 4
Ingredients
1 can black beans, drained and rinsed
½ red pepper, finely diced
2 ears of sweet corn, shucked
1 jalapeno, finely diced
1 cup cherry tomatoes, halved
½ cup red onion, finely diced
1 avocado, halved, pitted and diced
¼ cup feta cheese, crumbled
Juice of half lime
Extra virgin olive oil, to taste
Rice wine vinegar, to taste
Salt, to taste
Freshly cracked pepper, to taste
Method
1. In a large bowl add black beans, red pepper, corn, jalapeno, cherry tomatoes, red onion, avocado, lime juice and feta cheese. Add a drizzle of extra virgin olive oil and a drizzle of rice wine vinegar to taste. Season with salt and freshly cracked pepper. Toss to incorporate all ingredients. Enjoy!
