8 chicken breast halves
skinned and boned
1/4 teaspoon salt
1/4 teaspoon white pepper
2 eggs :
beaten
1 cup milk
4 slices cooked ham cut in half
:
1-ounce per slice 4 slices Swiss cheese cut in half
:
1-ounce per slice 1/3 cup all-purpose flour
1 1/3 cups fine dry bread crumbs
vegetable oil mushroom sauce :
optional 10 3/4 ounces mushroom soup :
undiluted
8 ounces commercial sour cream
4 ounces sliced mushrooms -- drained
1/3 cup dry sherry
Place each piece of chicken between 2 sheets of wax paper; flatten to 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle with salt and pepper. Combine eggs and milk; brush chicken pieces with milk mixture. Place ham slice and cheese slice in center of each chicken piece. Brush top of cheese slices with milk mixture. Fold short ends of chicken over ham and cheese; roll up, beginning with one unfolded side. Secure with wooden picks. Dredge chicken in flour; dip in remaining milk mixture, and coat well with bread crumbs. Cover and chill 1 hour. Heat 1/2 inch oil in a heavy skillet (3500F); add chicken, and pan-fry over medium heat 20 minutes or until golden brown, turning servings.

4 Slices honey baked ham
100g Perfect Italiano Mozzarella cheese
100g Perfect Italiano Parmesan cheese
300g Breadcrumbs
200g Flour
2 Eggs, beaten
Salt and pepper
Cooking oil
Toothpicks
Steps:
1. Season chicken breasts with salt and pepper all over.
2. Create an incision in the center of each chicken breast.
3. Place ham in the incision and top with Perfect Italiano Mozzarella and Parmesan cheese.
4. Enclose and secure with toothpicks.
5. Dredge chicken in flour, followed by beaten eggs, then bread crumbs.
6. Deep fry in 170°C cooking oil for about 15 mins, until chicken is cooked through.
7. Slice chicken in half and see cheese ooze out from the center!

RECIPE
STUFFED MEATBALLS
1lb Ground Chicken
4 Oz Cubed Swiss
4 Oz Black Forest Ham
1 Cup Heavy Cream
2 Eggs
5 oz Ground Pork Rinds
1) Grab about 3 oz of your ground chicken and flatten it out into a circle on a work surface. Place aslice of ham on top of that, and the a couple cubes of cheese. Pick the whole thing up and encase the ham and cheese with the ground chicken.
2) In a bowl, combine your eggs and cream. Place your balls into your cream mixture and then into your pork rinds.
2) Place these onto a parchment lined baking sheet and place them into a noven at 375°F for 22-25 minutes or until firm and golden brown. Let rest for 5 minutes before serving.
MEATBALLS

1) In a blender cup, add your chicken, swiss, ham, and water. Blend until everything is homogenous. Refrigerate for at least 10 minutes to allow to firm up.
2) Ball up by hand (or using an ice cream scoop) and drop them into your cream mixture. Then into your breadcrumbs. Place onto a parchment lined baking sheet.
3) Place the pan into an oven set to 375°F for 18-20 minutes or until golden brown.

Chicken Cordon Bleu is one of the classic chicken dishes. I always thought it was French and that it had been around forever. Actually, chicken cordon bleu is Swiss and only appeared in about 1940. Traditionally, chicken cordon bleu is a whole chicken breast with a pocket cut in it. The pocket is filled with ham and cheese and the whole chicken breast is coated in breadcrumbs and deep-fried. In this healthy version, the chicken breast is beaten flat and rolled into a sausage with the ham and cheese. Instead of being deep-fried, this healthier chicken cordon bleu is shallow fried and baked. The shallow frying gives the breadcrumbs a golden colour which you wouldn't get with oven baking, without the whole thing being submerged in hot oil.
