How to glaze desserts with cocoa butter ( honey apple entremet).
Christmas is almost here, and as a pastry chef this is my favorite time of the year because we get to showcase our creativity through different desserts that are inspired by this time of year. This is a signature cake of mine that I developed to be shared with loved ones only during this special time of year because it takes so damn long to make. The cake is layered with leftover thanksgiving apple pie filling, salted caramel, a crunchy filling, and a very light light brown and orange scented cream. I then sprayed it with cocoa butter to give the cake a velvet coating. I heard this what all the cool pastry chef are doing. Lol. If you don't want to invest the money in a chocolate spray gun, I also offered an alternative when using cocoa butter to coat cakes, and worst case scenario you could always buy it in a spray can. It works just as good, but it is extremely expensive using it that way. I put a lot of time and effort into this video, because I appreciate you guys. I hope you like it.
