1 c Pitted prunes cut up 1 ts Baking soda 1 c Boiling water 1 c Butter 1 c Sugar 2 Eggs 1 3/4 c Flour 2 tb Cocoa Preheat oven to 350 F. Prepare a bundt pan. Sprinkle soda on prunes. Pour boiling water over and allow to cool. Cream butter and sugar in food processor. Add eggs. Add prune mixture and whir about 15 seconds. Add flour sifted with cocoa. Mix till blended with on/off motion. Pour into pan. Bake 45-55 minutes. When cool, turn out. Sprinkle with icing (powdered) sugar if you like. This is a deliciously moist cake. -----

INSTRUCTIONS: 1. Preheat your oven to 175°C (350°F). 2. Line an 8x8-inch baking pan with parchment paper. 3. Make the base: Add all the base ingredients to a food processor and blend until they form a sticky mixture. Press this evenly into the baking pan. 4. Clean the food processor and then blend together all the ingredients for the chocolate layer. Spread this mixture evenly over the base. 5. You can use a wet fork to smooth the sticky mixture. Sprinkle coconut over the top to cover it. 6. Bake in the oven for 20 min. If you'd like to toast the coconut, place the slice under the broiler for a minute or two. 7. Remove from the oven and let it rest for 10 min before cutting and serving. Enjoy!

Prune Cake Recipe
1 cup softened Butter 250grams 1 ½ c white sugar 300 grams 4 large eggs 1 ½ c cake flour 180 grams 1 teaspoon baking powder 1 teaspoon baking soda ¼ teaspoon salt ¾ c Sour milk ( substitute ¼ c evap + ½ c tap water + 1 tspb vinegar use white or clear Or ¾ c fresh milk + 1 tspn vinegar)
½ cup stewed prunes
Note make 1 cup stewed prunes and divide into 2 Half for the cake and half for the frosting
Frosting
½ c syrup from stewed prunes 1 ½ cup softened butter ½ c shortening I used crisco brand 1 can chilled condensed milk (must be chilled atleast 12 hrs) ½ c chopped stewed prunes Extra prunes halves for toppings
prunes I used is dried and pitted no seeds
