Moist and delicious - prune and cranberry cake for those happy moments!
Fall deep in love with this prune and cranberry recipe…
INGREDIENTS
200 gm cake flour
200 gm butter - room temperature
200 gm gula apong ( palm sugar) or just sugar
200 gm dried prune
200 gm dried cranberry
2 medium sized egg - room temperature
2 tsp baking powder
METHOD
1. Cream butter and palm sugar till light and fluffy
2. Add eggs and beat till well combined
3. Separately, mix blended fruit into sieved flour and baking powder
4. Then add half of the fruit mixture into batter and beat till well mixed, finish off with the other half of fruit mixture
5. Pour batter into a 9” x 6” baking pan and steam for 4 hours.
6. Constantly pour boiling water to refill the water in the steamer
7. 4 hours later, take it out of steamer and let it cool for at least 2 hours on a rack before cutting.
The 4 hours of waiting is so so worth it❤️

Ingredients:
130 g rolled oats (1 1/2 cup)
160 ml hot water (2/3 cup)
150 g greek yogurt(10% fat)/ 1/2 cup
2 eggs
60 g sweetener(stevia/or your choice)/ 1/4 cup
2 tablespoons of sunflower oil
60 g walnuts/ 1/2 cup
150 g dried plums(3/4 cup)
40 g almond flour (1/2 cup)
pinch of salt
6 g baking powder (1 1/4 teaspoon)
1/2 teaspoon baking soda
23 x 10 cm / 9 x 4 inches baking pan
almond flakes for decoration
bake 40-45 minutes at 180°C/ 360°F

Bryson's Baked Goods Prune Cake
This cake is very moist and delicious. It would make a great Holiday Cake.
How to line a tube pan video:
Prune Cake
1 C. vegetable oil
2 C. sugar
3 eggs
1 tsp. vanilla
2 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. soda
1 tsp. cinnamon
1 tsp. ginger
1 c. buttermilk
2 c. prunes, cooked and mashed
1 c. walnuts, chopped
Preheat oven to 300 degrees. Grease a 10 tube pan with cooking spray and flour well. In a large mixing bowl, cream the oil and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla and mix well. Sift flour with salt, soda and spices. Add to batter, a little at a time, alternating with buttermilk Mix well. Fold in prunes and walnuts. Pour into prepared pan. Bake for 1 1/4 hours.
(To Cook Prunes: I use 1 large container of dried prunes. Pour them into a bowl. Add 1 1/3 cups water. Microwave until prunes are tender, and most of the water has been used. Drain remaining water, and mash.)
Buttermilk Icing
1 stick butter or margarine
1 1/2 c. sugar
1 c. buttermilk
1/2 tsp. baking soda
1 T. light corn syrup
2 tsp. vanilla
Combine butter, sugar and buttermilk in a small saucepan. Bring to a hard boil, stirring constantly. Add baking soda. Cook until it starts to foam. After it foams, reduce heat to low. Cover and simmer for 3 minutes. Add corn syrup and vanilla. Pierce cake with meat fork, and cover with half the sauce. Allow cake to cool, as icing soaks in. When cool, invert onto cake plate. Pour remaining icing, right side up, over surface of cake.
(This recipe belonged to my great-great grandmother, who was born in 1898, and died in 1966, and was given to her as young bride, when she married in 1917.)

Very tasty. We did not make the icing as we were slimming!! However , as usual, the recipe is below, and is for both.
Ingredients
1 Cup oil
2 Cups sugar
3 eggs - whole
1 Cup buttermilk
1 teaspoon salt
1 teaspoon of baking soda
1 Cup chopped nuts
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon nutmeg
1 teaspoon vanilla
2 Cups flour
1 Cup chopped prunes
Directions
Mix oil , eggs and sugar. Then add milk and dry ingredients alternatively.
Add prunes and nuts and bake at 300f or 150 c
In oblong tin.
ICING
1 cup sugar
1 tablespoon syrup ( any)
Half cup buttermilk1 teaspoon vanilla
Half teaspoon of baking soda
Quarter to half cup of margarine
Boil until it forms a soft ball and spread on cake while cake is still warm
