How To make Chocolate Cherry Cheesecake
8 1/2 oz Chocolate wafers, fine crush
1/2 c Butter, melted
12 oz Semi-sweet chocolate chips
1 1/2 c Heavy cream
16 oz Cream cheese, softened
1/4 c Sugar
4 ea Large eggs
3/4 c Cherry flavored liqueur
1 t Vanilla extract
1 lb Cherry pie filling
1/2 c Heavy cream whipped (opt.)
In large bowl, combine chocolate wafer crumbs and butter. Pat fimly into 9-inch springform pan, covering bottom and 2 1/2 inches up sides. Chill. Preheat oven to 325 degrees F. Combine over hot (not boiling) water, chocolate chips and heavy cream. Stir until morsels are melted and mixture is smooth. Set aside. In large bowl, combine cream cheese and sugar, beating untl creamy. Add eggs, one at a time, beating well after each addition. Add chocolate mixture, cherry liqueur, and vanilla, mix until blended. Pour into prepared crust. Bake at 325 degrees F. for 60 minutes. Turn oven off. Let stand in oven with door ajar 1 hour. Remove, cool completely. Chill 24 hours. Spread cherry pie filling over top of cheesecake leaving 1-inch from the edge. Decorate edge with whipped cream, if desired.

1/2 cup unsweetened cocoa powder
1 cup white granulated sugar
2 tsp vanilla extract
1/2 tsp salt
4 large eggs, at room temp
For Cherry Whipped Cream:
2 cups heavy cream, well chilled
1 tsp vanilla extract
2 tbsp cherry liqueur, or 1 tsp cherry extract
1 cup powdered sugar
For Topping:
21 oz cherry pie filling, 1 can

Today I am making another great Summer and No Bake Dessert recipe that everyone will love and enjoy at your next BBQ Cookout, Picnics, Fish Frys and more; Cherry Cheesecake Pie AKA Cherry Cream Cheese Pie!
Simple and easy, creamy, refreshing, and bursting with Cherry flavor; everyone will be going back for seconds!

Graham Cracker Crust
2 cups graham cracker crumbs
1/4 cup white sugar
7 tablespoons unsalted butter, melted and cooled
Filling
1 (8 ounce) package cream cheese or 1 (8 ounce) tub cream cheese spread, softened
1 (14 ounce) can sweetened condensed milk
1/2 cup freshly squeezed lemon juice
1 teaspoon pure vanilla extract
1 (21 ounce) can cherry pie filling, chilled
1/2 teaspoon pure almond extract
Ellen’s Magic: You may use a store bought 9-Inch graham cracker crust for this recipe. You can also use blueberry, strawberry, or any kind of pie filling.
Preheat Oven to 350 Degrees
For the Crust: Crush the graham crackers until they are fine crumbs then add them into a large bowl then pour in the sugar and melted butter and stir until well combined. Pour the crust mixture into a greased 9-inch deep dish pie plate and press evenly and firmly into the bottom and sides. Bake for 7 to 8 minutes. Remove from the oven and cool completely on wire rack.
For the Filling: In a large bowl using a electric mixer, add the cream cheese and cream on medium speed until fluffy. Next add in the sweetened condensed milk and continue mixing until well combined. Add and mix in half the lemon juice then add and mix in the other half, and add in the vanilla extract and continue to mix until well incorporated. Pour the filling into the cooled crust. Place the pie into the refrigerator and let it chill overnight, until well firm and set. The next day, add the almond extract into the cherry pie filling and mix until well combined. Pour the cherry filling on top of the pie and spread evenly. Cut into desired slices, serve with whipped cream (if desired) and enjoy!

생 체리를 듬뿍 넣은 체리 치즈 케이크를 만들어 봤어요~
요즘 체리가 아주 달고 맛있어서 상큼하게 즐기려고 생으로 사용했어요.
두꺼운 빨대를 이용하면 아주 편하게 씨를 제거할 수 있답니다.
체리는 역시 초코와 잘 어울리는 것 같아요.
초코시트와 초코 치즈 케이크가 정말 맛있더라구요.
씨를 뺀 체리 안에 짤 주머니를 이용해 치즈 케이크 반죽을 먼저 채우고 난 후
그 위에 치즈 케이크 반죽을 부으면 조금 더 깔끔하고 예쁜 모양이 될 것 같아요.
과즙이 팡팡 터지는 체리 케이크, 아주 맛있게 잘 먹었답니다~

초코 케이크 시트
1. 끓인 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕과 바닐라 익스트랙을 넣어 주세요.
2. 계속 저으면서 약 40도 정도까지 온도를 올리고 냄비에서 볼을 내려 주세요.
3. 버터와 우유가 들어 있는 볼을 냄비 위에 올리고 코코아 파우더를 넣고 중탕해 주세요.
4. 달걀을 고속에서 휘핑해 미세하고 고운 거품 상태로 만들어 주세요.
(마지막 1~2분은 가장 낮은 속도에서 기공을 정리해 주세요)
5. 밀가루를 체에 쳐서 넣고 섞어 주세요.
6. 버터와 우유, 코코아 파우더를 골고루 섞은 다음 약간의 반죽을 덜어 넣어 주세요.
7. 골고루 섞은 다음 본 반죽에 넣고 섞은 다음 18cm 오븐 팬에 부어 주세요.
8. 탕탕 쳐서 큰 기포를 제거하고 170도 오븐에서 35분 정도 구워 주세요.
9. 완전히 식힌 뒤 1.5cm 3장으로 자르고 2장은 지름 15cm, 한 장은 9cm로 잘라 주세요.
치즈 케이크 반죽
10. 물에 가루 젤라틴을 넣고 10분 정도 불려 주세요.
11. 실온 상태의 크림치즈에 설탕, 바닐라 익스트랙 레몬즙을 넣고 섞어 주세요.
12. 플레인 요거트를 넣고 섞고 불린 젤라틴을 전자레인지에 15초 정도 가열해 녹인 뒤 넣고 섞어 주세요.
13. 50% 정도 휘핑한 생크림을 넣고 골고루 섞어 주세요.
14. 치즈 케이크 반죽 240g을 덜고 녹인 다크 커버춰 초콜릿을 넣고 섞어 주세요.
15. 15cm 무스 틀에 무스 띠를 넣고 15cm 초코 시트를 바닥에 넣어 주세요.
16. 초콜릿 치즈 케이크 반죽을 붓고 평평하게 한 다음 냉동실에서 20분 정도 굳혀 주세요.
17. 씨를 제거한 체리를 테두리에 두르고 9cm 초코 시트를 중앙에 넣어 주세요.
18. 하얀색 치즈 케이크 반죽을 붓고 평평하게 하고 15cm 초코 시트를 올려 주세요.
(씨를 제거한 체리의 구멍에 짤 주머니를 이용해 치즈 케이크 반죽을 먼저 채우면 더 깔끔하게 만드실 수 있어요)
19. 냉장실에서 3시간 정도 굳히고 반으로 자른 체리로 장식했어요.
