The Crust with a Twist: Moving away from the traditional graham cracker crust, we're embracing a family secret - vanilla wafer crust!
The Cherry on Top: And of course, no cherry cheesecake is complete without the cherry topping, adding that burst of flavor and color.
Cherry Cheesecake Parfaits
Ingredients
6 ounces - (1 cup) dried cherries
1 cup - water
1/2 cup - granulated sugar
1/4 teaspoon - coarse salt
6 ounces - cream cheese, softened
3/4 cup - part-skim ricotta
1/2 teaspoon - pure vanilla extract
1/4 cup - confectioner's sugar
8 - amaretti cookies, coarsely chopped
Directions
1. Combine cherries, water, granulated sugar and 1/8 teaspoon salt in a small saucepan over medium heat. Bring to a simmer, and cook, occaisionally stirring, for 20 minutes. Let cool.
2. Meanwhile, blend cream cheese, ricotta, vanilla,confectioner's sugar and remaining 1/8 teaspoon salt in a food processor until smooth. Divide cherries among 4 glasses, then top each with ricotta mixture. Sprinkle tops with amaretti cookies and serve immediately.

You'll Need:
1 box vanilla wafers
2 pkgs cream cheese, softened
3/4 c white sugar
2 eggs
1 t vanilla
1 t lemon juice
pie filling, any kind
Combine cream cheese, eggs, sugar, vanilla, and lemon juice in a mixing bowl.
Mix until creamy.
Fill a muffin pan with paper liners.
Put a vanilla wafer in each muffin paper.
When the mixture is creamy, pour some on top of the vanilla wafers. Fill the paper about half full.
Bake at 350 for 15-18 minutes. They are done when a toothpick comes out clean, not goopy.
Let the cakes cook for 10-15 minutes then add a spoonful of pie topping.
I like to put these in the fridge for a few hours so they get nice and cold.
For extra yumminess, top with whipped cream.
