Chinese Peanut & Lime Chicken (Chinese Style Cooking Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
This is one of my own recipes - the experiment of putting the ingredients together was a success. Try if you dare!
Ingredients:
8 Chicken Drumsticks
3 Cloves Garlic
4 Lime Leaves
1cm Ginger Root
1 Tsp Turmeric
1 Tsp Paprika
1 Tsp Ground Coriander
1 Tsp Chilli Powder (optional)
4 Tsp Crunch Peanut Butter
Small Bunch Coriander
3 Spring Onions
1 Tbsp Sugar
1 Litre Chicken Stock
Salt to Taste
Method:
Slice and chop the ginger
Chop the garlic
Roughly chop the spring onions
Roughly chop the coriander
Cut the knuckles off of each drumstick
Then cut into 2 equal size pieces
Heat 2 tablespoons of oil in a wok
Add the garlic and ginger
Fry for a few seconds
Add chicken pieces
Stir-fry for 2 minutes
Add the turmeric, paprika, coriander and chilli powder
Fry for 2 minutes on medium heat
Add peanut butter
Add chicken stock
Stir to ensure all ingredients are mixed well
Bring to the boil
Add lime leaves
Push the lime leaves into the stock
Place lid and simmer on medium heat for 30 to 40 minutes until the chicken is cooked
Add sugar and salt to taste
Remove the lime leaves
Add chopped coriander the spring onions and stir
Transfer onto a dish, garnish and serve

Chicken Satay with Peanut Sauce
RECIPE:
Chicken Satay with Peanut Sauce - Perfectly grilled chicken satay skewers in the most flavorful marinade. Served with THE BEST creamy peanut sauce ever!!!
INGREDIENTS:
1/4 cup coconut milk
2 tablespoons reduced sodium soy sauce
2 1/2 teaspoons yellow curry powder
1 1/2 teaspoons turmeric
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon brown sugar
1 tablespoon fish sauce
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
1 tablespoon canola oil
Kosher salt and freshly ground black pepper, to taste
FOR THE PEANUT SAUCE
3 tablespoons creamy peanut butter
1 tablespoon reduced sodium soy sauce
1 tablespoon freshly squeezed lime juice
2 teaspoons brown sugar
2 teaspoons chili garlic sauce, or more, to taste
1 teaspoon freshly grated ginger
DIRECTIONS:
1. To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside.
2. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce.
3. In a gallon size Ziploc bag or large bowl, combine chicken and coconut milk mixture; marinate for at least 2 hours to overnight, turning the bag occasionally.
4. Drain the chicken from the marinade, discarding the marinade.
5. Preheat grill to medium high heat. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste.
6. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12-15 minutes.
7. Serve immediately with peanut sauce.

• 1” piece peeled fresh ginger
• juice of 1 lime

• ¼ cup sweet soy sauce (kecap manis)

Easy Peanut Chicken | 5 Ingredients only
Recipe
Chicken ( 2 lbs your choice of cut meat )
3/4 Cup LIGHT Soy Sauce ( Use less soy and add water if using regular soy sauce)
1/2 Cup Sesame Oil
6-7 Cloves Minced Garlic
1/2 Cup Peanut Butter ( unsweetened)
Sugar ( optional )
1/3 Cup water
*If you don't have sesame oil, use 1/4 cup water and 1/4 cup of flavorless oil.
Directions
In a bowl, marinade chicken with soy sauce, sesame oil, minced garlic and sugar. Marinade for 1 hour . Remove chicken and place it on baking tray. Bake chicken in a preheated oven 400 degrees Fahrenheit for aprox 40 mins. To create the peanut sauce, take the residual marinade and heat it in a sauce pan and add in Peanut Butter. Add 1/3 cup water ( if required ) to keep the sauce from being to thick. After 40 mins, remove chicken and coat the chicken with the peanut sauce. Place it back in the oven for another 10 minutes. Serve over a bed of rice and veggies.
