ASIAN CASHEW CHICKEN RECIPE [Better than Takeout] | Chinese Chicken with Cashew Nuts
Asian Cashew Chicken [Better Than Takeout] is a sweet and sour Chicken and Cashew stir-fry recipe. Chicken and Cashew are tossed in a sweet and sour sauce made with Hoisin Sauce, Soy Sauce, Sugar, Garlic, Rice Wine Vinegar, and Sriracha. This is tossed with crispy fried Chicken, Veggies, and Cashews, garnish with Sesame Seeds, and Served with Plain white rice.

INGREDIENTS:
- 2 Tbsp Sesame Oil
- 1 lbs chicken breasts boneless and skinless
- ½ Tsp Kosher Salt
- 1 Tsp Ground Black Pepper
- 3 Tbsp Cornflour
- ½ cup Cashew Nuts
- ½ cup Green Bell Pepper chopped
- 1 Tsp Sesame Seeds for garnish
- ¼ cup Scallions chopped
For the Sauce
- ¼ cup Hoisin Sauce
- 1 Tbsp Dark Soy Sauce
- 1 Tbsp Rice Wine Vinegar
- 1 Tsp Sriracha
- 2 Tbsp Sugar
- 6-7 cloves Garlic minced
HOW TO MAKE CASHEW CHICKEN (STEP BY STEP RECIPE)
1) Bring a Pot of water to boil with the Chicken. Cover cook it at low flame for 5 minutes. Once the chicken is partially cooked, get it off the heat and strain. Sauce some of the Chicken stock and discard the rest. Cooldown the Chicken to room temperature and cut it into 2-inch cubes.
2) Season the Chicken with Kosher Salt and Ground Black Pepper. Add the Cornflour to it and mix well coating every piece of the Chicken evenly. Heat some Sesame Oil in a Skillet. Once the Oil is slightly hot, add the Chicken pieces and fry them over high heat for 5 minutes, until they turn golden brown. Keep stirring occasionally, so that the Chicken turn golden brown evenly, on both sides.
3) In the same Pan, add the Garlic, Veggies, and the sauce. Add the Cashew and mix well. Saute over high heat for just 1-2 minutes and serve.
4) Garnish with sesame Seeds, Scallions, and serve hot with white rice.
Tips to make the Best Cashew Chicken You can use Rice Flour in place of Cornflour for a crispy Chicken. You can toast the Cashew in the oven and then use it. Your Cashew Chicken should essentially be sweet. If it's too salty, it's because you have used too much of Soy sauce. Use Dark Soy Sauce as its less in sodium and high in flavors. Balance the salt in the dish with brown sugar. You can soak and use Raw Cashew Nuts. Serve this with Coconut Fried Rice for the best flavors. How to make Low Carb & Keto Cashew Chicken Make the following changes for the Keto Cashew Chicken recipe: Replace Sesame Oil with Coconut Oil Replace Soy Sauce with Coconut Aminos or Tamari Sauce Replace Sugar with Keto Sweetener Replace Sriracha with Chili Garlic Sauce Replace Cornflour with Rice Flour or ArrowRoot Flour Sadly, you cannot replace anything with Hoisin Sauce. However, since you'd be using Keto sweetener and Coconut Aminos, it'll bring this Keto Cashew Chicken much closer to the authentic recipe. How to replace Hoisin Sauce - The perfect substitute for Hoisin Sauce Ideally, there isn't any replacement. However, you can combine 2 TBsp of Oyster Sauce, 1 Tsp of Barbeque Sauce, 1 Tsp of Chili Garlic Sauce, and 2 Tbsp of Brown Sugar to make a sauce which tastes closer to an actual Hoisin Sauce. This quantity will yield you 1/4 cup of Hoisin sauce. (For this Cashew Chicken recipe, you would need about 1/4 cup hoisin sauce for 1 lbs Chicken). Other possible variations to this recipe You can make a couple of variations to this recipe Vegetables - Veggies add a bit of crunch to this Cashew Chicken. I know, it's not typically used in Authentic style Chinese Cashew Chicken, but for your homemade version, a couple of veggies like Snow Peas, Broccoli, Bokchoy, or Bell Peppers won't hurt, right! Shaoxing Wine - This is the most commonly used Chinese wine for cooking. It's very cheap to buy and you will find it in the International Aisle. If you cannot find this, you can use dry white wine as a replacement. Toast the Cashew - I have used Raw Cashew. However, you can toast it. Toast it in the oven at 350F for 2-3 minutes. Garnish - Garnish with Scallions and Sesame Seeds Serving Options for Cashew Chicken You can serve this with Rice Ideally this tastes the best with white rice. The sweet and spicy taste of this tastes best with plain white rice. However, you can also serve with Brown Rice or Rice Noodles or Ramen or Pasta as well.

Ingredients for Cashew Chicken:
(Tsp- Teaspoon; Tbsp- Tablespoon )
Boneless Chicken (thigh) - 450 gms (cut into 2 inch strips)
For Marination :
Salt-3/4 tsp
Crushed Pepper- 1/2 tsp
Making the Sauce:
- Oyster Sauce- 1 tbsp
- Dark Soy Sauce- 2 tsp
- Rice Vinegar- 1 tsp
- Honey - 1 tbsp
- Water- 1 tbsp
Other Ingredients:
- Spring Onion whites- 3-4 tbsp
- Garlic chopped- 2 tsp (5-6 cloves)
- Ginger chopped- 1.5 tsp
- Thai Long Red Chillies, sliced -2
- Spring Onion greens, cut into 2 inches- 20 nos.
- Roasted whole cashews- around 30
- Oil- 2 tbsp for stir-frying the chicken pieces + 1 tbsp
Preparation:
- Take boneless thigh pieces, pat dry and cut them into 1/2 thick by 2 inch long inch strips.
- Now add salt and crushed pepper
- Set aside for 15 mins.
- To prepare the Sauce, add all the items in a bowl. Stir it well to mix uniformly. Whisk it well.
- Chop the ginger, garlic, spring onion white and spring onion greens.
Process:
- Heat 1.5 tbsp oil in a wok and add the marinated chicken pieces. Spread the pieces for it to get the heat.
- Fry on medium heat for 4-5 mins till browned. Remove and set aside.
- Add 1 tbsp oil to the oil in the wok and heat.
- Now add the fine chopped garlic, ginger and spring onion whites.
- Stir fry on high heat for 1 min and then add the fried chicken pieces. Mix it well and stir fry for 1 min.
- Add the roasted cashews and stir fry for 1 min.
- Now add the rest of the sauce, mix and stir fry on medium heat for 1-2 mins till the chicken becomes brown and begins to thicken.
- Garnish with cut spring onion greens and sliced Thai red chillies. Mix and stir fry for around 1 minute.
- Serve hot after garnishing with some more spring onion greens.

Ingredients:
1 pound Boneless Chicken Thighs (cubed)
4 oz. pre - toasted and unsalted Cashew Nuts
1 tablespoon Minced Ginger
1 tablespoon Minced Garlic
1/2 of a Red Bell Pepper (diced)
1/4 Yellow Onion (diced)
2 stalks Celery
1 teaspoon cooking Rice Wine
2 tablespoons Light Soy Sauce for meat and 1 tablespoon for pre-mix sauce
1 teaspoon Sesame Oil for meat and 1 teaspoon for pre-mix sauce
Cooking oil (as needed)
1 teaspoon Sugar
1/4 cup Chicken Stock
1 pinch of White Pepper
1 teaspoon Corn Starch
Method:
1.Marinate: Add Rice Wine, Soy sauce and sesame oil to the chicken and mix.
2.Add corn starch to the mix and set aside for 30 minutes.
3.Make Pre-Mix: Sugar, Chicken Stock, soy sauce, sesame oil and white pepper.
4.Stir cashew nuts in a pan with the cooking oil.
5.Remove from pan and set aside.
6.Add 3 tablespoons of cooking oil.
7.Stir fry half of the ginger and garlic until fragrant.
8.Add 1/3 of our marinated meat.
9.Stir fry for 5-6 minutes until cooked.
10.Remove when cooked and stir fry the rest and set aside.
11.Add 2 tablespoons of cooking oil to the pan.
12.Stir fry the remaining ginger and garlic.
13.Add all vegetables: Red bell pepper, yellow onions and celery.
14.Stir fry for 5 minutes, then put the cooked chicken with the vegetable mix.
15.Add the Pre-mix sauce done in Step 3.
16.Add cashew nuts.
17.Add to serving plate
Classic Cashew Chicken Stir Fry - Thai Style
You can make better than take out Thai style cashew chicken stir fry at home in less than 30mins. This recipe made with Crispy toasted cashew nuts, marinated chicken and vegetable cooked together in homemade sweet and savoury sauce. This dish goes really with your favourte Jasmine rice or noodles.

▢80 g Raw cashew nuts About half cup or use roasted cashew nuts
▢3 cloves Garlic Finely chopped
▢½ Onion Cut small dices
▢8-10 Dried Chillies Deseeded and cut small pieces,
▢100 g Mushroom About 3.5 oz, Straw, button, white mushrooms, etc
▢½ Bell Pepper Cut small squares
▢3-4 Spring Onion cut 2'' pieces
▢2-3 tbsp Vegetable oil Peanut, canola, sunflower, or neutral flavour oil
Marinate for Chicken
▢1 tsp Light soy sauce Or regular soy sauce
▢½ tsp Baking Soda
▢1 tsp Corn starch
▢1 tsp Sugar
Stir Fry Sauce
▢1 tbsp Light soy sauce Or regular soy sauce
▢1 tsp Dark sweet soy sauce Or dark soy sauce or Kecap Manis
▢1 tbsp Fish sauce
▢2 tbsp Oyster sauce
▢1 tsp Sesame oil
▢2 tsp Sugar
▢½ tsp Corn starch
First combine all the sauce ingredients to a small bowl and prepare the chicken and vegetables.
Next, marinate the chicken pieces with soy sauce, baking soda, corn starch, and sugar.
Sauté the cashew nuts for 2-3 minutes until crispy golden brown.
Stir fry the marinated chicken for 2-3 minutes until the chicken is cooked through and set it aside.
Add onions and stir fry for few seconds, and follow with the dried chillies.
Next add the garlic, red peppers and mushrooms.
Add the cooked chicken back in the pan and pour the sauce in and combine well.
Once the sauce become thick, add the cashew nuts and spring onions.
Mix well and serve with Jasmine rice or noodles.
