To that add: 2 small cans green chiles 2 cans cream of mushroom soup 1 cup cheese 1 cup milk 2 cooked chichen breast that have been cubed

Easy Chile Relleno Casserole
Chile Rellenos has always been one of my favorite dishes, but making them is a long process. Today I am demonstrating a quick and easier way how you can enjoy the same taste in much less time.
I used Queso Asadero, an excellent melting cheese, for this recipe, but you can use any other cheese of your choice. You can also saute shrimp with your favorite seasonings and add a layer of shrimp, which is entirely up to you, and make it as unique to your taste and liking. To go with our casserole in this same video, I also shared the rice recipe and the sauce to go with the casserole.
Ingredients:
6-8 Poblano Peppers
Vegetable Oil as needed
1 Lb Queso Asadero or a Melting Cheese of your Choice
5 Large Eggs
Seasonings for the egg mixture:
1 Tbsp Tomato Chicken Bouillon
1/2 Tsp Garlic Powder, Black Pepper, Paprika, Salt
3 Oz Mexican Blend Cheese
Ingredients for the quick rice recipe:
2 Cups Long Grain White Rice or Jasmin Rice
One Minced Garlic Clove
1/4 Onion
4 Cups of Water, Vegetable, or Chicken Broth
1 Tbsp Tomato Chicken Bouillon or salt as needed
1 Tsp NM Chili Powder
1 Cup Frozen Unthaweed Peas and Carrots
3-4 Tbsp Vegetable Oil
Ingredients for the sauce:
2 Garlic Cloves
1/4 White Onion
2 Roma Tomatoes
2 Cups Chicken or Vegetable Broth
1/4 Cup
Salt and Pepper to your taste
1/4 Tsp Cumin
1 Cup Heavy Cream, Mexican Sour Cream, or 4oz Cream Cheese

Gigi's Ortega Rice Casserole is a staple at our holiday dinners. Holiday dinners are potluck style, for the most part, and she never wavered on bringing this dish. So when 2020 hit and we couldn't see her I busted out the Ortega Rice Casserole recipe card to make sure the dish was still at the table. A couple months later our Gigi passed away, it's still not real to me. We haven't had a celebration of life or a funeral yet. 2020 distanced all of us so I feel like she is still at home waiting out the pandemic.
When I was getting ready for Thanksgiving it dawned on me that she wouldn't be there. We felt this at all the family gatherings but I still held on to the idea that she was at home staying safe. It's starting to sink in. Again I busted out Gig's Ortega Rice Casserole recipe card this time realizing she won't ever make this again. This recipe was always one I wanted to share. Maybe I should have given myself more time to process her loss before making the video because I was a complete mess after it was done.
This is my why.
This simple dish encompasses gathering with friends and family, love, and laughter. Time well spent with naps, football, wine, a silly made up wine cork game, the whole family or just a handful. As time passes this dish will gather more memories. You change out diced green chilis for jalapenos and you have Gigi's unforgettable mistake of 2015. That fumble forever added a Herrera style (my dad loves jalapenos or anything spicy) rendition to the dish. We laughed hard at her honest mistake then and again this year as I was asked if I made it Herrera style.
