How To make Low Fat Chicken Rice Casserole

parsley, fresh, for garnish
Directions:
Heat oven to 350 degrees. In large saucepan, blend flour, salt and pepper. Stir in broth and milk. Stirring constantly, cook over low heat, until mixture is smooth and bubbly. Bring to boil and stir 1 minute. Stir in remaining ingredients. Pour into ungreased baking dish (10x6x1.5), or 1 1/2-quart casserole. Bake uncovered 40 to 45 minutes. Sprinkle with snipped parsley.

This is one of the Easiest and Tastiest meal preps, there’s absolutely NO REASON for you to be eating plain chicken and rice
Macros per serving (4 total)
450 Calories | 45g Protein | 47g Carbs | 9g Fat
Ingredients
- 750g Raw Chicken Breast cut into cubes
- 2 tsp Oregano
- 1 tsp Garlic Powder
- 2 tsp Paprika
- 1 tsp Cumin
- 1 tsp Chilli Powder
- 1 tap Salt & Pepper
- 1 Whole Lime Juice
- 2 tsp Olive Oil for cooking
- 1 Medium Onion Chopped
- 1 Medium Red Bell Pepper Chopped
- 100g Black Beans (Brand: Freshona)
- 210g Washed Uncooked Basmati Rice
- 1 tsp of each seasoning used previously
- 300ml Water or chicken stock for more flavour
- Garnish with Chopped Coriander/Cilantro

Important Cooking Notes
- When you add the uncooked rice, let it toast with the spices for 1-2 mins to enhance flavours
- After adding the water, mix well then cover and simmer on low heat for 12-15 mins. Stir halfway to prevent the rice from sticking to the bottom of the pan
- Add the chicken and mix in with coriander

INGREDIENTS
4 lbs (1816 g) boneless skinless chicken thighs
2 tbsp (16 g) chili powder
4 tsp (12 g) salt
2 tsp (6 g) pepper
6 cups (900 g) cooked rice
4 medium (800 g) zucchini
16 oz (454 g) mushrooms
1 medium (200 g) onion
1 cup (112 g) cheddar cheese shredded
4 tbsp (60 g) olive oil
8 tbsp (120 g) buffalo sauce
INSTRUCTIONS
FOR THE RICE
1. Cook enough rice to yield 6 cups of cooked rice. 1 cup of dry rice will make around 2-3 cups of cooked rice depending on what kind you use.
FOR THE CHICKEN
2. In a large bowl add the chicken, a bit of oil, chili powder, salt, and pepper. Toss to coat.
3. You can cook your chicken however you like. I baked mine at 425°F for 10 minutes and then broiled it on the top rack for 5 minutes to develop color. Cut into 1 inch pieces. If you would rather pan fry it follow the instructions in the next step.
4. Heat a grill pan or a skillet over medium high heat and add some oil. Cook the chicken thighs for 4-5 minutes on each side. Cut them into a large dice and return to the pan to develop color.
FOR THE VEGETABLES
5. Wash and cut your zucchini into a small dice and mushrooms into a large dice. Cut the onion into a small dice.
6. Heat a large skillet over medium high heat. Add oil and saute the onions for a couple of minutes.
7. Add in the zuchinni and cook until soft.
8. Add a bit more oil and add in the mushrooms, season with salt to help bring out the water. Allow them to cook and develop color.
9. Measure out 6 cups of cooked rice and add to a large bowl. Mix in the chicken, vegetables, cheese, and buffalo sauce. Season with salt and pepper to taste.
PLATING
10. This recipe makes 10 servings. Divide your ingredients evenly 10 ways.

1 package onion soup mix
10.5 oz condensed cream of mushroom soup
salt
pepper
Instructions:
1. Preheat the oven to 325 F and spray a 9x13 casserole dish with cooking spray. Add the chicken breasts to the baking pan and season with salt and pepper. Then, pour the rice over the chicken and evenly spread the onion soup mix over the top. Combine the mushroom soup with the 2 cups of water and pour over the chicken. Cover with foil and bake for an hour and 15 minutes or until rice is soft and cooked through. Serve immediately!
