How To make Chicken and Pasta Bake
1 c Onion-chopped
1 c Mushrooms-fresh,sliced
1 c Zucchini
1/2 c Celery
1 c Garlic-minced
3 tb Butter or margarine
1 c Tomatoes, whole-drained and
1 ts Basil, whole-dried
1/2 ts Salt
1/4 ts Red pepper-crushed
8 oz Macaroni shells-uncooked
3 c Chicken-cooked, chopped
1 1/2 c Whipping cream
2 c Monterey jack cheese-shreded
1/2 c Parmesan cheese-grated
Saute first 5 ingredients in butter until vegetables are crisp-tender. Stir in tomatoes, basil, salt, and crushed red pepper; set aside. Cook pasta according to package directions; drain. Combine pasta, vegetable mixture, and chicken in a large bowl; spoon mixture into an 11x7x1-1/2-inch baking dish. Combine whipping cream and cheeses in a medium saucepan; cook over low heat until cheese melts, stirring frequently. Pour sauce over pasta mixture. Bake, covered, at 350F for 40 to 45 minutes or until thoroughly heated. Makes 6-8 servings.

1 lb boneless skinless chicken breast
1 lb rigatoni noodles
8 oz andouille sausage
1 diced shallot
2 cups fresh spinach
4 tbsps butter
1 tbsp garlic paste
2 tbsps flour
2 cups half and half
1 cup heavy cream
1 cup shredded parmesan cheese
2 cups shredded mozzarella cheese
1/4 cup diced parsley
salt, pepper, garlic, onion powder, cajun seasoning
Directions:
Start by dicing your shallot or onion and cutting the Andouille Sausage into bite sized pieces. Season chicken breast generously with cajun seasoning and all purpose seasoning.
2. Preheat oven to 400 degrees and boil your noodles per package instructions.
3. Sear chicken breast for 60 seconds per side in a hot skillet with a little cooking oil and then place the chicken in the 400 degree oven for about 15 minutes or until the chicken is 165 degrees internal temp.
4. Meanwhile, start on the Alfredo sauce by adding some butter to a skillet and then adding the sausage. Cook until the sausage is well browned and then remove with a slotted spoon. Next, add the shallot and cook for 2 minutes. Add 2 more tbsps of butter, and garlic paste. Next, add in 2tbsps of flour and cook for 2 minutes.
5. Next, add in your heavy cream and half and half. Bring to a boil and then reduce to a simmer. Add in the spinach and stir until it wilts and combines. Turn the heat to low and then begin adding your shredded cheese. Season to taste. Add in your sausage. Chop the chicken and add that to the sauce as well.
6. Mix everything together and then add to a casserole dish, top with mozzarella cheese and bake at 350 for 20 minutes.
7. Garnish with chopped parsley and serve.

Cheesy Chicken Alfredo Pasta Bake
Servings: 6 - 8
INGREDIENTS
1 tablespoon olive oil
3 chicken breasts, cubed
Salt and pepper to taste
4 garlic cloves, minced
2 ½ cups chicken broth
2 ½ cups heavy cream
1 pound uncooked penne
2 cups parmesan
2 cups mozzarella
A handful of fresh parsley, chopped
PREPARATION
1. In a pot, heat oil and add chicken. Season chicken with salt and pepper, add garlic, then brown the chicken. Add broth, heavy cream, and pasta, and bring to a boil. Cover and reduce the heat to a simmer for 15-20 min.
2. Turn off heat and stir in 1 ½ cups of parmesan cheese. Pour half of the pasta into a greased 11x7 inch or 9x13 inch baking dish. Sprinkle evenly with 1 cup of mozzarella cheese. Layer the remaining half of the pasta evenly on top. Sprinkle evenly with 1 cup of mozzarella and ½ cup of parmesan.
3. Broil 10 - 15 minutes, or until the cheese is golden brown. Remove and sprinkle with fresh parsley.
4. Serve warm and enjoy!

1/2 cup (120ml) chicken stock

1/2 cup (50g) mozzarella cheese grated/shredded

Ingredients
▢5 cups short pasta (340-390 grams) penne, fusili or similar
▢1 tablespoon oil
▢1 lb boneless skinless chicken (about 2-3 breasts or 6 thighs)
▢salt and pepper
Pasta Sauce:
▢¼ cup butter
▢¼ cup sun dried tomatoes drained and chopped
▢2-3 cloves garlic minced
▢1 teaspoon Italian seasoning
▢½ teaspoon dried oregano
▢⅛ - ¼ teaspoon crushed red pepper flakes
▢¼ teaspoon salt
▢¼ teaspoon pepper
▢3 tablespoons flour
▢1 ½ cups low sodium chicken broth
▢1 ½ cups heavy cream
▢¼ cup shredded Parmesan cheese
▢2 cups chopped fresh spinach
Pasta Bake
▢1 ½ cups shredded mozzarella cheese
▢2 tablespoons Parmesan cheese
Instructions
Lightly grease one 9×13″ baking dish or two 8×8″ baking dishes. Turn the oven to 375 degrees F if cooking right away (instructions for making ahead or freezing below).
Cook the pasta according to package directions (just to al dente), drain and place in the baking dish.
Make the pasta sauce
Heat a large skillet over medium-high heat and add the oil. Cut chicken into ½ - ¾ pieces.
Season the chicken lightly with salt and pepper and cook until lightly browned on all sides and cooked through (about 5-6 minutes). Place in the baking dish with the pasta.
In the same skillet, melt the butter over medium heat.
Add the sun dried tomatoes, garlic, Italian seasoning, oregano, salt, pepper and red pepper flakes and cook 1-2 minutes.
Stir in the flour until absorbed, and cook 1-2 minutes.
Gradually whisk in the broth and cream until combined and smooth. Cook over medium heat, stirring often, until slightly thickened.
Stir in the ¼ cup Parmesan cheese and spinach, then pour over the pasta and chicken in the baking dish. Stir to combine.
Top with mozzarella and 2 tablespoons Parmesan cheese.
Follow directions below to store for later, or cover with foil and bake at 375 degrees for 20 minutes until hot and bubbly, then broil to brown the cheese if desired.
Serve.
