The Ultimate Dinner Recipe | King Ranch Chicken Casserole
I don’t think anything smells better than this King Ranch chicken casserole cooking in the oven. The Texas-inspired classic comfort food is the perfect dish, loaded with layers of tortillas, chicken, cheese, and creamy gravy that will be a guaranteed family favorite.

INGREDIENTS
3 teaspoons olive oil, extra virgin
1 cup chopped sweet yellow onion
1 chopped bell pepper, any color (I used a red bell pepper)
10.5 ounces cream of chicken soup, undiluted
10.5 ounces cream of mushroom soup, undiluted
10 ounces mild Rotel, undrained
3 cups boneless skinless chicken breast, shredded and cooked
2 tablespoons chopped cilantro, optional
12 soft taco-size corn tortillas, quartered
4 cups freshly shredded Colby and Monterey jack cheese, divided into 1½ and 2½
INSTRUCTIONS
Preheat the oven to 375°F.
Add the olive oil, chopped onion, and chopped bell pepper to a 4 to 5-quart
Dutch oven over medium-high heat. Saute for 5 to 7 minutes or until the onions and bell peppers are softened. Remove from the heat.
Whisk in the undiluted cream of chicken soup, cream of mushroom soup, and the undrained Rotel. Whisk until well combined.
Stir in the shredded chicken and chopped cilantro.
Lightly spray a 9×13 baking dish with nonstick cooking spray. Line the bottom of the prepared baking dish with half of the quartered corn tortillas.
Spoon half of the chicken mixture over the bottom layer of corn tortillas.
Sprinkle 1½ cups of the shredded cheese over the chicken layer.
Layer the remaining corn tortillas over the cheese layer.
Spread the remaining chicken mixture over the corn tortillas.
Sprinkle the remaining shredded cheese over the chicken mixture.
Bake uncovered for 30 minutes. Serve while hot.

Hi friends! This Chicken Parmesan Casserole is a great family meal for those busy weeknights.
I love Chicken Parmesan, and I also love shortcuts. The other night I was craving chicken parmesan, but I was feeling too lazy to make it. Ever been there, y’all? I came up with this simple little recipe. It was so good, so I wanted to share it with you!
I was pushing for time, so I used a rotisserie chicken for this recipe. Remove the skin from the chicken breasts and chop into cubes. In a pan, heat up the chicken and add in marinara sauce. I had some homemade sauce in the freezer, but you can use jarred sauce instead, if you prefer. Add in cooked pasta and mix well. Place the chicken and pasta mixture into a greased casserole dish and top it with Italian bread crumbs and shredded cheese. I like to add parsley flakes for a bit of color, but that’s optional. Pop this in the oven for about 20 minutes or until heated through. There you have it! A quick, easy and delicious meal in under 45 minutes.

Keto Pesto Chicken, Feta and Olive Casserole
This keto, low-carb creamy chicken dish from ruled.me bubbles with your favourite Mediterranean flavors like feta cheese, olives, and basil. That combination of flavours is so tasty! Toss in some chicken and a creamy sauce, and you've got an easy, delicious meal.
Ingredients
• 1½ pounds (680 g) boneless chicken thighs
• Salt and pepper, to taste
• 2 tablespoons butter
• 3 ounces (85 g) pesto
• 1¼ cups (296 ml) heavy whipping cream
• 3 ounces (85 g) green olives
• 5 ounces (142 g) diced feta cheese
• 1 clove garlic, finely chopped
Directions
1. Preheat your oven to 400°F/204°C. Cut the chicken into small, bite sized pieces. Season with salt and pepper.
2. Add the butter to a large skillet over medium-high heat. When the butter is hot and melted, add the chicken pieces and pan-fry until golden brown. You may need to cook the chicken in batches.
3. Mix the pesto and heavy cream together in to create the sauce.
4. Add the chicken, olives, feta, garlic, and pesto sauce to a casserole dish. Mix together well then bake for 30 minutes or until heated through and browned around the edges.
Notes
This makes a total of 4 servings of Keto Pesto Chicken, Feta, and Olive Casserole. Each serving comes out to be 829.63 Calories, 68.5 g Fats, 5.4 g Net Carbs, and 51.18 g Protein.
