How To make Chicken and Olive Casserole

4 tablespoons Olive oil
3 pounds Chicken cut up
1 large Onion :
chop fine
2 Cl garlic chop
1 pound Zucchini; peel :
chop fine
1 pound Tomatoes; peel chop
1 tablespoon Oregano
1 teaspoon Thyme
Salt and pepper 16 Green olives :
pit
Heat the oil in a pan and fry the chicken pieces until golden brown. Remove and reserve chicken. In the same oil, fry the onion and garlic until they start to turn soft. Add the zucchini, tomatoes, oregano and thyme. Continue to fry until some of the sauce has been reduced. Replace the chicken in the pan and season lightly with salt and pepper. Cover and cook over a low heat for approximately 1 hour, stirring occasionally. 10 minutes before the chicken is ready, rinse the olives and add them to the pan. A good chicken casserole is an absolute joy. So I thought i'd make a version that would be a bit lighter than say something like a beef stew, but still give you a nice warming feel, especially with it still being a bit nippy out!
Now a good chicken casserole doesn't need a lot to make it tasty, just a few simple ingredients and some good techniques, and you'll a hearty, healthy meal. Now I used chicken thighs, because they are cheap, but also they retain moisture so they stay nice and juicy whilst cooking. You can make 8 chicken thighs go a long way with this meal! You could of course use breast, or drumsticks or a mixture. It's entirely up to you.

To make my best chicken casserole you will needs:
►8 chicken thighs
►3 medium carrots peeled and sliced
►2 medium sized leeks
►1 stick of celery finely chopped
►2 fat garlic cloves
►2 bay leaves
►1 tsp of dried tarragon
►600-700ml of chicken stock
►1 tsp of English mustard
►Small handful of freshly chopped parsley
►500g of new potatoes
►180ml of white wine
►1+1/2 tbsp of plain flour
►Salt & pepper
►Oil/butter for cooking with

1/2 tsp Salt
1/2 tsp Garlic Powder

1 box of chickpea or gluten free penne pasta
2 cups water
Pressure cook on High for 4 Minutes
Do a quick release and turn off Instant Pot
Remove chicken and cut into bite sized pieces
Stir in 1 1/2 cup of Italian blend Cheese
Add back chicken
Top with crushed pork rinds and grated parmesan cheese
