Homemade HEALTHY CARROT CAKE Recipe - Low Sugar, Low Fat, Whole Grain
This video will show you step by step how to make my homemade Healthy Carrot Cake Recipe and my Homemade Cream Cheese Frosting Recipe so don’t worry if you are new to baking. I have also listed the ingredients for you below so that it is handy for you to copy and keep with your recipes. I developed these recipes myself through a process of trial and error to make it as healthy and nutritious as I possibly can without compromising taste, texture, and moist satisfaction! It’s much lower in sugar, fat, and cholesterol than traditional carrot cake recipes and it’s made using only whole grains for added fiber and nutrition. You can enjoy delicious rich tasting carrot cake without all the unhealthy ingredients. You will love it because it’s not too sweet so you can enjoy it for breakfast or as a healthy snack anytime during the day. You can sweeten it up to your liking with my homemade cream cheese frosting (ingredients also listed below). Carrots are rich in antioxidants and beta-carotene and are incredibly healthy for you. Carrot Cake Recipe
Ingredients:
4 large eggs (beaten well) or egg beaters substitute
1 ½ c. white granulated sugar
¼ tsp. salt
1 ½ c. whole wheat flour
½ c. quick oats
½ c. oat bran
2 tsp. baking soda
4 tsp. ground cinnamon
¾ c. olive oil
2 lbs. shredded raw carrots
1 c. chopped nuts
Cream Cheese Frosting Recipe
Ingredients:
½ box or approx. 1 ¾ c. Confectioner’s Sugar
1 Stick (4 oz.) salted butter
1 (8 oz.) package of Philadelphia Brand Neufchatel 1/3 Less Fat Cream Cheese
1 tbl. plus ¼ tsp. of vanilla extract
UPDATE: February 5, 2017: I am continually tweaking this recipe to make it even more healthy. Since I posted this video, I have been able further cut down on the sugar content without compromising the taste or texture. It has been a gradual process for me so I have adjusted to the taste and prefer it very much over the version I created above. If you would like to try it with less sugar than the above recipe then here's the change: Instead of 1 1/2 cups of white granulated sugar, you use 1/2 cup of raw honey and 1/4 cup of white granulated sugar. If you try it this way, let me know what you think!

Low Fat Carrot Cake: Sweet Treats 2
This really easy-to-do low fat carrot cake comes with a delicious creamy frosting. Perfectly enjoyed with friends and a cup of tea in the afternoon.

Ingredients:
2 eggs
140 g dark muscovado sugar
Zest of one orange
140 g mixed fruit
280 g finely grated, peeled carrots
100 g self-raising flour
130 g plain wholemeal flour
1 tsp baking powder, plus a pinch
1 tsp bicarbonate of soda
2 tsp cinnamon
1/2 tsp salt
1 tsp orange juice
200 g cream cheese
200 g creme fraiche
3 tbsp icing sugar
Vanilla extract
40 g crushed walnuts
Step 1: Prepare the Mix
Separate two eggs, and place the yolks and whites in two separate bowls. Then whisk the egg white until light and frothy and put it to the side.
Add the muscovado sugar and the oil to the bowl with the egg yolks. Mix it until smooth. Add orange zest and mixed fruits. Mix it again. Add grated carrots, then salt. Sift flour in, stir gently. Mix together the baking soda, bicarbonate of soda and 1 tsp cinnamon and sift it into the bowl. After that stir vigorously.
Prepare a greased and flour dusted baking tray. Gently fold the egg white with a metal or wooden spoon in. Try to keep the fluffiness of the egg white.
Pour the mix into the pan. Smooth it over with the spoon. Put it into the pre-heated oven at 180°C for 40-45 minutes.
Step 2: Make the Frosting
While the cake cools down, start with the frosting. Add orange juice to cream cheese and crème fraiche. Also add the vanilla extract. Icing sugar follows with a pinch of cinnamon. Mix it.
Frost the cake with the icing and decorate with chopped walnuts.

Ingredients
Cake:
* 2 1/4 cups whole wheat flour (270 g)
* 3 teaspoons baking powder (*see note below)
* 1 teaspoon baking soda
* 3 teaspoons cinnamon
* 1/2 teaspoon nutmeg
* 1 teaspoon sea salt
* 1/2 cup applesauce (125 g)
* 1 cup oat milk (250 ml) or any type of milk
* 2 teaspoons vanilla
* 1/3 cup honey (100 g) or 1/2 cup sugar
* 1/2 cup melted coconut oil (110 g) or any vegetable oil
* 2 cups grated carrots (2,5 - 3 medium carrots)
* 1/2 cup raisins and chopped walnuts
Frosting
* 2 tablespoons honey (43 g)
* 1 1/2 cup low-fat cream cheese (350 g)
Instructions
1. Preheat the oven to 350°F and grease a 7x11 baking pan.
2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
3. Pour into the bowl the applesauce, oat milk, vanilla, honey and oil.
4. Mix the mixture until just combined.
5. Fold in the carrots, raisins and walnuts.
6. Bake for 45 to 60 minutes or until a toothpick inserted comes out clean. Let cake cool completely before frosting!
7. Make the frosting: combine cream cheese and honey until very smooth, scraping down the sides occasionally.
8. Frost the cake and sprinkle with something.
9. Store frosted cake in the fridge.

Here's how to make the viral baked oats from TikTok!
Ingredients
▸ ½ cup rolled or quick oats
▸ ¼ cup unsweetened almond milk
▸ ½ ripe banana
▸ 1 egg (can omit)
▸ 1 Tablespoon maple syrup (I used monkfruit maple syrup)
▸ 1 Tablespoon peanut butter
▸ ¼ teaspoon baking powder
▸ Pinch of cinnamon
▸ Pinch of sea salt
▸ 2 Tablespoons chocolate chips (I used Lily’s)
optional toppings: more peanut butter for drizzling, extra maple syrup and a splash of milk
INSTRUCTIONS
1. Preheat oven: Preheat oven to 350°F.
2. Blend: Add all ingredients except for the chocolate chips into a blender and blend until fully combined. Stir in 1-2 Tablespoons of chocolate chips.
3. Bake: Pour batter into greased baking dish or ramekin. Top with extra chocolate chips and bake at 350°F for 25 minutes or until an inserted toothpick comes out clean.
4. Serve: Let cool, top with an extra drizzle of peanut butter, maple syrup and a splash of milk and dive in.
