How To make Cardamom Fudge ( Sheer Payra)
2 c Sugar
2/3 c Milk
1/4 ts Salt
2 tb Light corn syrup
2 tb Margarine or butter
1/2 ts Ground cardamom
1/4 c Chopped walnuts
1/4 c Chopped pistachios
Cook sugar, milk, salt and corn syrup in 2-quart saucepan over medium heat, stirring constantly, until sugar is dissolved. Cook, stirring occasionally, to 240F on candy thermometer or until small amount of mixture dropped into very cold water forms soft ball that flattens when removed from water. Remove from heat. Add margarine. Cool mixture to 120F without stirring. (Bottom of pan will be lukewarm.) Add cardamom. Beat vigorously and continuously until candy is thick and no longer glossy, 5 to 10 minutes. (Mixture will hold its shape when dropped from spoon.) Quickly stir in nuts. Spread mixture in buttered 9x5x3-inch loaf pan. Let stand until firm. Cut into 1-inch squares.

طرز تهیه
دو گیلاس شکر و دو گیلاس آب را با هم مخلوط کنین و درجه منقل را به درجه بلند بانین تاکه جوش کنه مدت هژده دقیقه را میگیره به منقل مه هژده دقیقه شد هر منقل کمی فرق داره وهمچنان دیگ که در داخلش شربت را تیار میکنم هم فرق داره بعضی نازک است بعضی دبل شما اندازه درست را از روی این که شربت از دو گیلاس به یکونیم گیلاس بیایه و مه بخاطر که به شما درست اندازه را نشان بتم شربت را اندازه کدیم شربت باید از دو گیلاس به یکونیم گیلاس شوه یعنی نیم گیلاس آبش باید خشک شوه و بعد گلاب و دونیم گیلاس شیر خشک را همرایش مخلوط شربت باید گرم باشه کنین و تمام مغز هارا رویش بچینین بگزارین که خودرا خشک کنه در کمتر از یک ساعت مکمل خشک شد

Afghani Sheer Pira Dessert | Barfi/Milk Fudge Recipe | GLUTEN FREE | #afghansweets #sheerpira #barfi
A wonderfully fragrant sweet dish with the unmistakable scents of cardamom and rose water. Also known as barfi or milk fudge, it is commonly eaten on special occasions in many regions of Afghanistan and Pakistan.
The recipe is easier than you think and I’m quite sure you will be delighted with the results.
INGREDIENTS:
1 cup granulated sugar
1 cup water
2 cups milk powder
½ cup walnuts
½ cup almonds
1 teaspoon cardamom powder
1 tablespoon rose water
2 tablespoons pistachios, chopped
METHOD:
1. Grease an 8” square cake tin or plate. Line with parchment paper.
2. Grind walnuts and almonds to a smooth powder. Transfer into a medium sized bowl and add in milk powder along with cardamom. Mix well.
3. Add water and sugar into a heavy based pan. Dissolve the sugar, bring to a boil and then simmer on medium-low heat without mixing for 8-10 minutes. The liquid will bubble and become foamy and slightly thickened when ready.
4. Remove pan from the heat immediately. Stir the rose water into the dry ingredients in the bowl and immediately pour the dry sugar syrup into the dry ingredients. Mix well to combine all the ingredients.
5. Pour the fudge mixture into the prepared dish and spread evenly into the corners. Sprinkle over the chopped pistachios and press in with the back of a spoon. Leave to cool and set in the refrigerator overnight. This is enough time for the mixture to set and it can be cut into square or diamond shapes before serving.
NOTE: This dessert will keep for up to a week if stored in an airtight container.

sheer payra is very simple to make and quite a crowd pleaser. My husband really liked the fudge because it has a really nice flavor from ground cardamom and nuts .
The only thing that takes time in making this fudge is melting sugar and boiling the syrup and letting the fudge cool — other than that the whole process is very simple and quick to make. The most important and critical part of successfully making this fudge is the consistency of the sugar syrup. It should not be too thin (fudge won’t set) or too thick (fudge would be very hard).
