How To make Buttermilk Pancakes w/ Blueberry Sauce
1 c Blueberries
2 tb Sugar
1 1/2 ts Cornstarch
1/4 c Water
1 ts Lemon Juice
1/2 c Whole-Wheat Flour
1/4 c Flour
1 ts Baking Powder
3/4 c Non-Fat Buttermilk
1/4 c Egg Substitute Product
2 tb Honey
Blueberries can be fresh or frozen. To make blueberry sauce, in a small saucepan, combine blueberries, sugar and cornstarch. Stir in water and lemon juice. Cook over medium heat, stirring constantly until mixture and sauce thickens. Set aside. To make pancakes, in a medium bowl, combine flours and baking powder. In a small bowl, combine buttermilk, egg product and honey. Stir buttermilk mixture into flour, stirring until smooth. Preheat non-stick skillet, sprayed with vegetable oil spray, over medium heat. Pour batter in skillet to make six small pancakes. Cook until bubbles break on the surface. Turn and cook until golden brown. Serve with blueberry sauce. Calories 361 Fat 1g. 125g Plain flour
1 ½ tbsp caster sugar
1 tsp baking powder
½ tsp bicarbonate of soda
1 medium egg
175ml buttermilk
100g blueberries
1-2 tbsp veg oil to fry
Maple syrup to serve
Mix the flour, sugar, baking powder, bicarbonate of soda together. Add the egg and buttermilk and stir until you have a thick batter. Fold through the blueberries.
Heat a heavy-based frying pan over medium heat. Wipe the surface with a wad of kitchen paper dipped in oil. Add two tablespoons of the batter per pancake to the pan. Once the bubbles appear on the surface of the pancake, turn it over and cook the other side. Cook the pancakes in batches. Serve straight away drizzled with maple syrup.

After a lot of experimenting with pancake recipes, I finally got one that will give you the yummy, fluffy pancakes we all crave in the morning.

Ingredients:
1 1/2 cups of flour (210g)
3 tablespoons of sugar (48g)
2 teaspoons of baking powder (9g)
1 teaspoon of salt (5g)
1 teaspoon of baking soda (5g)
2 eggs (Room Temperature)
1 cup of milk (240ml)
2 tablespoons of melted butter (28g)
1 teaspoon of vanilla extract (5ml)
*This recipe makes about 8-10 pancakes.
