How To make Brandied Chocolate Truffles
3/4 c Whipping cream
3 tb Unsalted butter
1/2 lb Bittersweet chocolate
-OR- semisweet chocolate -- Chopped 2 tb Cognac or other brandy
3/4 lb Bittersweet chocolate
-OR- semisweet chocolate -- chopped Bring whipping cream and unsalted butter to simmer in heavy medium saucepan. Reduce heat to low. Add 1/2 pound bittersweet chocolate and stir until melted. Mix in 2 tablespoons Cognac. Let stand at room temperature until firm enough to mound on spoon, about 3-1/2 hours. Line cookie sheet with foil. Spoon truffle mixture by rounded tablespoons onto prepared cookie sheet, spacing apart. Chill until firm, about 1 hour. Roll 1 truffle between palms of hands into ball. Place on same sheet. Repeat with remaining truffles; refrigerate. Melt 3/4 pound chocolate in top of double boiler over simmering water, stirring frequently until smooth. Remove from over water. Grasp 1 truffle between thumb and index finger. Dip into chocolate, coating completely. Shake gently to remove excess chocolate. Place on same sheet. Repeat dipping with remaining truffles. Refrigerate until firm, about 30 minutes. Remove truffles from foil. (Can be prepared 1 week ahead. Refrigerate in airtight container.) Serve cold. INGREDIENTS
300 grams chocolate tablets with 70 % cocoa
40 grams butter (unsalted)
250 ml good quality pure liquid cream (heavy cream)
50 grams or more cocoa powder to coat the truffles.
you can add at the end ( before the cooling) a dash of liquor if you like (grand marnier, cognac, whisky or rhum) or some vanilla extract to sweetened the chocolate.
Cooling time : in a tray covered with cling film ( bottom and top) then in the freezer for one or 2 hours.
for the decoration you can also roll the truffles in desiccated or coconut powder and chocolate shaving dark or white
Important Cooking notes:
- slight adjustment from the video to make things go smooth: Bring your cream to the boil and as soon as it starts to boils, TURN THE HEAT OFF then add the chocolate in bit by bit. you can also just put the chocolate in a glass bowl and pour the hot cream over the chocolate instead (that method is even better if you never work with chocolate)
!! If your chocolate splits, just add a few tablespoon of cold water to it and whisk until it gets back on track !!
- Don't forget to add a cling film on top of the chocolate ganache before putting it in the freezer to solidify.
The time it takes for the ganache to solidify in the freezer may vary depending on what freezer you use.

This easy no bake recipe makes the most scrumptious chocolate truffle! They come together in a snap, are beyond addictive and yes they’re brimming with brandy!

Do you ever just want a bite or two of something sweet and or chocolatey, to satisfy a craving? I don’t always have a slice of cake at the ready — shocking considering how much I bake — so I decided to whip up some truffles. Since the weather is cooling down a bit, I used a drop (1/4 cup) of brandy helps to warm things up. I finished them off with a quick roll in the toasted coconut, pecan, and cocoa powder. Soooo GOOD! Does anyone else remember those little chocolates in the shape of liquor bottles? Not sure if I should have had those as a kid, but I guess the 80’s were a different time Enjoy this adult version of that.
I do think these truffles would be a PERFECT Valentine's Day treat in case you're wondering what to make.
Yes you can totally omit the alchohol if desired! To add some interest feel free to mix in toasted nuts, some coffee or candied cherries to make this recipe your own.
