How To make Blueberry Upside Down Cake
1 c Flour
2/3 c Sugar
1/3 c Cornstarch
2 ts Baking powder
1/2 ts Salt
1 Egg
2/3 c Milk
1/3 c Light corn syrup
1 ts Vanilla
1/4 c Packed brown sugar
2 tb Light corn syrup
1 tb Lemon juice
1 c Fresh or frozen blueberries
Spray a 9-inch layer cake pan with cooking spray. Add brown sugar, corn syrup and lemon juice together; stir to combine. Put in pan. Place pan in 350 degree oven 3 minutes. Remove. Add blueberries. Prepare White Cake batter. For the cake batter: In a large bowl, combine flour, cornstarch, baking powder and salt. In a medium bowl, using a fork or wire whisk, mix egg, milk, corn syrup and vanilla. Add to flour mixture; stir until smooth. Carefully spoon batter over blueberries, smoothing top. Bake 35 to 40 minutes at 350~, or until a toothpick inserted in center comes out clean. (Do not underbake) Immediately run a spatula around edge of pan, and invert onto a serving plate. Hey guys what is going on?! Today I'm super excited to share with you all this old school recipe for blueberry upside down cake! Well, actually.. the technique to prepare this cake is old fashioned but the flavor combo is 100% my idea!! It's originally made using strawberries with strawberry jello but it's all about the blueberries here! The texture of this cake you guys is literally mind-blowing! It's as if jello and a marshmallow were to have a cake baby, that's the exact texture! Try it out soon and you'll be tempted to experiment with other flavors!

Ingredients:
1 box cake mix prepared
1 cup blueberries
1 cup miniature marshmallows
1/2 box berry blue jello
Directions:
Prepare the cake mix according to the directions on the back of t he box. Add to a cake or sheet pan fresh or frozen blueberries and sprinkle the blueberries with berry blue jello. Add marshmallows all over the blueberries and lastly cover everything with the box of cake mix. Bake it in the oven for 35 minutes until toothpick inserted in the middle comes out clean. Enjoy this luscious dessert!
Ninja foodie: Cover the pan with foil and air fry it on the rack for 30 minutes.
Oven: Bake at 350 F. for 35 minutes
Instant pot: prepare cake in 2-6 inch cake pans. Cover and pressure cook for 30 minutes with 1 cup of water in the pressure cooker.
