How To make Blueberry Couscous Cake
6 c Apple juice
1 tb Vanilla
3 c Couscous
1 pt Blueberries
~ Pick over bb's, wash and set on paper towels to dry ~ Combine apple juice, vanilla, and couscous in a large saucepan and bring to a boil. ~ Cook, stirring constantly until thickened & all juice absorbed. Remove from heat. ~ Gently fold the bb's into hot mix. ~ Rinse but don't dry a 9x14 (inch) cake pan & pour the mix into it. ~ Chill until set, about 2 hours. ~ Cut into squares, and devour WITHOUT GUILT. Variations: Use strawberries in place of blueberries, top with unsweetened fruit jam thinned with a little water, arrange fruit slices on top for decoration. Tangy lemon, and tasty blueberries! Your family will be screaming for more.
Ingredients
1½ cups (375 mL) cake flour
¼ teaspoon (1 mL) salt
1 Tablespoon (15 mL) baking powder
3 Tablespoons (45 mL) sugar
1½ cup (375 mL) evaporated milk
1 lemon (zest & juice)
1 large egg
1½ teaspoons (7 mL) pure vanilla extract
2 Tablespoons (30 mL) butter, melted
1 cup (250 mL) blueberries
extra butter
Method:
Heat heavy skillet over medium heat.
Mix evaporated milk, juice of 1 lemon, and lemon zest.
Allow to sit for five minutes.
In a medium bowl, mix flour, salt, baking powder, and sugar.
To the milk mixture add egg, vanilla, and melted butter.
Whisk to combine.
Pour wet mixture into dry ingredients.
Stir gently to combine.
Stir in blueberries.
Melt butter in heated skillet.
Drop batter by 1/4 cup measures and fry pancakes on both sides until golden.
Serve with maple syrup.

Slimming World school cake recipe - 2½ Syns each

Makes 16 squares
4 eggs, separated
4 tbsp sweetener
1 tsp of vanilla extract
150g self-raising flour
1 level tsp baking powder
For the topping:
100g extra-light plain soft cheese
100g quark
2 level tbsp icing sugar, sifted
A few drops of vanilla extract
2 tsp sprinkles (count 1 Syn per teaspoon if you want to add more)
Preheat the oven to 180°C/160°C Fan/Gas 4. Grease a 22 x 22cm cake tin with low calorie cooking spray and line with greaseproof paper. Separate the eggs and put the egg yolks, sweetener and vanilla extract in a large bowl. Using an electric whisk, beat for 5 minutes until pale and slightly thickened. In a clean bowl, whisk the egg whites until soft peaks form.(If any grease or fat gets into the mixture the eggs won't fluff up) Gently fold the whites into the egg yolk mixture taking care not to knock out the air. Sift the flour and baking powder and gently fold into the eggs. Spoon the mixture into the prepared tin and bake for 20-25 minutes or until golden and the top is firm. Cool in the tin for 10 minutes then turn out and cool completely before adding the topping. Put the soft cheese, quark, icing sugar and vanilla extract into a bowl and stir well to give a smooth topping (take care not to over-beat or the mixture will be too runny) If you have time, chill for 10 minutes before spreading evenly over the cake. Scatter over the sprinkles, and cut into 16 squares.
