How To make Blistered String Beans with Pork
3 c Oil
2 lb String beans
3/4 lb Ground pork
1/2 T Dried shrimp
4 T Dry sherry
2 T Szechuan mustard green
1/4 c Chicken broth
1/4 c Water
1 T Soy sauce
1 T Sesame oil
Rinse the beans and break off the ends; dry them thoroughly to reduce spattering during deep-frying. Rinse and mince the Szechuan mustard green. Wash the dried shrimp and soak them in sherry for 1 hour. Drain them, reserving the sherry. Mince the shrimp. Mix the sherry from the shrimp with the chicken broth, water, soy sauce and sesame oil. Reserve. Heat the oil in a wok (or deep pan) until a bamboo chopstick sizzles when put into the oil. Deep fry the beans in 5 or 6 batches, until they develop brown blisters and shrivel slightly. Remove them batch by batch; drain each batch and keep them warm while you remove all but 2 T oil from the pan. Heat the 2 T of oil until very hot and add the ground pork. Stir fry until it is broken up into very small pieces and no longer is pink. Add the minced shrimp and Szechuan mustard green. Stir for 30 seconds. Add the string beans and stir to mix well for about 15 seconds. Add the liquid ingredients, toss until the liquid is reduced to 2 tablespoons. Serve on a warmed platter.

GARLIC GREEN BEANS⤵️
1 lb green beans
2 TBSP salted butter
1 tsp Garlic powder
1 tsp Salt
Red pepper flakes,
Minced/ grated garlic, as much or as little
1. Wash green beans. Cut the ends off green beans.
2. Melt your butter (only melt half way through)
3. Once butter is 1/2 way melted, add salt, garlic powder & red pepper flakes. Cook until butter is all the way melted and starts to bubble
4. Then add green beans and cook until they become a bright green.
5. Then add grated garlic, cook for 1 minute and then turn off heat

Today, we do a home version using green beans (or you can use chinese long beans). All you need is garlic and salt - that's it! Absolutely love it when simple = delicious flavor

Sichuan 'Dry Fried' green beans gotta be up there in all-time favorite way to eat green bean dishes.
Always a favorite to order at Sichuan restaurants… it’s usually fried together with pork, chilis, Sichuan peppercorns, and Sichuanese *yacai* (pickled mustard greens) and got this tender, blistered texture with a slight crispiness and char from frying.
