How To make Boiled String Beans with Ham
1 bone from a smoked ham or
8 pig's tails
2 1/3 pounds fresh string beans
1 tablespoon salt
1 teaspoon freshly ground black pepper
1 teaspoon sugar
1. Put the ham bone in a 6-quart pot with enough water to fill halfway. Heat to boiling, lower the heat to a simmer, and cover. Simmer 45 minutes.
2. Prepare the beans while the bone is simmering. Snap the stem end from each bean and pull gently along the length of the bean to remove the string. (It may not be necessary to remove the string from very young beans.) Rinse the beans in a colander under cold running water. Drain and add to the pot along with the salt, pepper, and sugar. Simmer the beans until very tender, up to 30 minutes for old tough beans or around 15 minutes for very tender young beans. Check the seasoning halfway through the cooking and adjust if necessary. Remove the bone and drain the beans. Serve hot.

String beans and shallots | Jacques Pépin Cooking At Home | KQED
Jacques Pépin shows us a tasty way to prepare string beans that is neither too little (blanching) or too much (mushy). As usual, you'll discover clever and time-saving techniques for peeling and chopping along the way. Boil the string beans in salted water for just about 6 minutes so they're still slightly crunchy. Sautee chopped shallot in butter with a splash of oil (Yes, you heard that right, both butter and oil. The oil will prevent the butter from burning). Make sure to cool your string beans before introducing them to the skillet. Sautee and serve.
What you'll need:
8 oz string beans, salt, pepper, 1 shallot

Thanksgiving Southern Style Green Beans!
In this video I show you how I cook Southern Style Green Beans with Smoked Ham Hocks. This is how I cook my canned green beans because it gives them a lot of flavor.
You can use smoked turkey wings as a replacement for the pork if you do not eat pork. Sometimes I use a few strips of fatback when I don’t have ham hocks but most of the time I keep them on hand.
To go vegan you can use Goya ham flavored packs, which are vegan friendly and a couple of tablespoons of vegetable oil.
Southern Style Green Beans
1 (102 ounce / 6 pounds 6 ounce) can of Green Beans any brand you like
1 Package Smoked Ham Hocks with 3 or 4 Ham Hocks
12 cups of water to start
1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper
1/4 Teaspoon Sugar, optional
Wash your ham hocks and add them and the water to a pot. Let cook on medium heat for about an hour. The ham hocks cooking in the water will create a ham broth which flavors the green beans. If the water level is low add more water. After another hour and a half the ham hocks should be tender but not done. Add the seasonings to the broth. Rinse the green beans in the sink in a colander to get rid of the liquid that the beans have been packed in. This makes the green beans taste like the can so you want to get rid of that taste. This is where the touch of sugar helps. Pour the green beans into the pot with the ham hocks. Cook for about an hour then taste to see what you need to add. You can add chopped onion and red pepper flakes at this point if you like. Continue to cook the green beans until most of the liquid is boiled off.
Enjoy!
