1/2 c Black beans
1/2 c Canned corn
1/2 c Cooked, brown rice
x Salsa A favorite one pot meal that you can take to work in a thermos is 1/2 c black beans (dehydrated or canned); 1/2 canned corn (rinsed) or cooked frozen corn; 1/2 cooked brown rice; and enough salsa to blend the mixture together. Black Bean, Corn, and Salsa Rice Salad:
Vegan Chicken Salad 2 Ways:
Crispy Roasted Potatoes Recipe:
Chickpea and Olive Spread:
1 cup chickpeas, mashed
1 cup garlic hummus
1.5 tbsp olive tapenade
1 tsp Greek or Italian seasoning
1 tbsp fresh lemon juice
black pepper and/or red pepper flakes to taste
Combine all of the ingredients in a large bowl. Mix well and adjust seasonings to taste. Add more tapenade, Greek seasoning, or lemon as desired. Serve as a spread for sandwiches or wraps. Layer under avocado for a twist on plain avocado toast, or serve on top of a roasted veggie salad.
Quick Peach and Apricot Compote:
2 12oz bags of frozen peaches
1/4 cup apricot jam
the juice of half an orange
1 tbsp water
2 pinches of nutmeg
Warm ingredients in a saucepan on medium heat for about 10-15 minutes or until softened, warmed through, and glossy. Tip: If you're making this as a dessert topping, add 1 tbsp of maple syrup. Especially if you're using natural apricot jam like I did. Enjoy!

Lime & Honey Glazed Salmon with warm Black Bean & Corn Salad
Ingredients for Salmon
Salmon - 2
Lemon juice- 1 Whole
Honey - 2Tbs
Pepper powder, Red chilly powder,Salt - 1Ts
Ingredients for Salad
Black Beans - 1Cup cooked
Corn - 1Cup thawed
Spinach - 4 cup
Garlic - 2 Cloves chopped
Onions - 1/2 in medium chopped
Red Bell pepper - 1/2 medium chopped
Coriander leaves - 1/4 cup chopped
Cumin powder,Pepper powder , Salt, Red Chilly powder - 1 Ts
Lime - 1/2 in Large
Directions
Thaw the salmon ..wash scarp the scales wash and pat dry with paper towel...
Take bowl whisk Pepper powder , Salt, Red Chilly powder,Lemon,Honey together... divide into half and pour into 2 bowls
Dip the salmon in this close the lids and give nice shake and refrigerator for 2 hrs
Take a Baking trap wrap with foil and smear some oil
Take small pan add one Tbs of olive oil fry salmon on both side for 1 per side ... transfer into a baking dish .. add remaining sauce & cover it with foil..bake for 30 mins on 350 degree...
In meantime turn on heat add some olive oil and add garlic fry for a min or so and add onions ... fry 2 mins add bell pepper fry for 2 to 3 mins... then add black beans & corn fry for 2 to 3 mins then sprinkle the powder & 1/2 of water .. hear I have used water from cooked black bean let this all cook for 5 mins then add Spanish and cook 2 -3 mins...
Garnish with lime juice and coriander leaves...
Serve the salmon on a bed of black bean & corn salad...
