1/2 c Black beans 1/2 c Canned corn 1/2 c Cooked, brown rice x Salsa A favorite one pot meal that you can take to work in a thermos is 1/2 c black beans (dehydrated or canned); 1/2 canned corn (rinsed) or cooked frozen corn; 1/2 cooked brown rice; and enough salsa to blend the mixture together. This is a very satisfying and filling meal. I certainly enjoyed my first five emails on this list. From: SHAbrI@delphi.com. Fatfree Digest [Volume 9 Issue 49] Aug. 9, 1994. Rich & Creamy Beans from Rachel Roddy | Genius Recipes
That bag of dried beans sitting in your cupboard that you just keep...not cooking? This week on Genius Recipes, Kristen uses a technique from Rachel Roddy, the English food writer and Guardian columnist living in Rome, for rich and creamy beans braised in the oven. It’s inspired by the gentle Tuscan method of cooking al fiasco, in a flask in the dying embers of a fire (or a pizza oven, cooling for the night). Worry not—you don’t need a pizza oven or a fire or even a flask. Just a pot, oven, and any dried beans you fancy. GET THE RECIPE ►►

When I shared the Hot Lunch Box Ideas, I showed few clips of what I give inside the thermos jar and many of you wanted to know the recipe of Black beans and brown rice. I cook this recipe two ways, one using red enchilada sauce if I have on hand or just season with salt and red chili powder. Since I personally think that Brown rice and Black beans has its own yummy flavor, I do not try to add too much spices in it but sometimes I add turmeric in it as well! You can then garnish with your choice of finely chopped veggies like onion, tomato, peppers and so on...
