How To make Black Bean Soup1
2 lb Black beans
1/2 c Sunflower oil
1/2 lb Bacon
1/2 lb Diced ham
8 ea Chopped onions
7 ea Minced cloves garlic
7 ea Stalks chopped celery
-w/leaves 3 c Uncooked brown rice
1/2 ts Cayenne
1 tb Vegtable season salt
4 ts Ground cumin
1/4 c White wine
1 c Sherry
6 qt Chicken broth OR 3 bouillon
-cubes and 6 qt of water
Wash black beans, cover with water and allow to soak overnight; rinse; drain; set aside. Pour oil into large soup pot. Add bacon, ham, onion, garlic and celery. Cook at high simmmer until vegetables are soft, about 30 minutes. Add beans, rice, seasonings, and broth to soup pot. Bring to boil; reduce heat, cover and simmer 2 1/2-3 hours. Let soup cool; put through a blender a little at a time until smooth.Return to soup pot; reheat on low about 45 minutes, adding wine andsherry. Ladle into bowls.

Black Bean Soup
-1 pound dried black beans
-1 tablespoon olive oil
-2 to 3 carrots, peeled and diced
-2 celery ribs, diced
-1 onion, diced
-1 red bell pepper diced
-3 cloves of garlic minced
-1 bay leaf
-6 cups of chicken stock
-2 knorr chicken bouillon cubes
-salt and pepper to taste
-Toppings; Sour cream, sliced green onions, and shrimp sauteed in garlic butter if desired
Soak beans in water for 6 hours, changing the water 2 to 3 times.
In a stock pot heat olive oil and add onions cooking a few minutes to softened. Add celery, carrots, red bell pepper, bay leaf, chicken bouillon cubes and pepper, coo another 10 minutes. Add chicken stock, bring to a simmer, cover and cook until beans are soft. Remove bay leaf, and using stick blender puree soup. Taste for salt. Garnish as desired.
