Black Bean Salsa
Here’s the black bean salsa you’ve been looking for. You know how to make salsa the traditional way—now, try our black bean corn salsa for a fun surprise at parties or at home. Spice things up even more with GOYA® Jalapeños Peppers and GOYA® Chili Powder. This zesty black bean salsa recipe is perfect as a dip, served with tortilla chips, or used to top nachos and tacos.

10 large tomatoes, cored
1 large onion
2 green peppers
8 garlic cloves, or about 4-6 tsp of minced garlic
1 jalapeno
1 cup or can corn
1 15 oz can black beans, drained and rinsed
1/2 c scallions, diced, OPTIONAL
1/2 c cilantro, chopped
1/4 c apple cider or white vinegar
1 lime, juiced or about 2 tbsp of juice
1 T salt
1/2 T pepper
Preheat oven 400º. Roughly chop tomatoes, onion and peppers. Place on two baking sheets with garlic. Bake for 30 minutes.
Meanwhile, in a pan, fry the corn so that it gets the liquid removed. Keep moving them around with a spatula so they don't burn. Turn off heat and add black beans, scallions, cilantro, lime juice, vinegar, salt and pepper.
Drain the extra juice off of the pan and place vegetables in your food processor and pulse lightly ... Usually only for 10 seconds. A few good chunks are still nice! Add the hot vegetables to the corn and bean mixture.
Now you have a couple options. One, fill your clean and sterilized mason jars and put them in the fridge or freezer. If you made a big gigantic batch, which I am known to do in peak harvest season, I will fill freezer bags and freeze the salsa that way. Either way ... enjoy the salsa!

How to Make Black Bean Salsa
Ingredients
1 cup black beans
1 cup of corn, boiled
1 ½ roma tomatoes
½ onion
Juice of 1 lime
3-4 sprigs of coriander
3 tbsp olive oil
1 tsp salt
1 tsp cumin
1 tsp black pepper
½ a Chili
Making Black Bean Salsa
1. In a clay pot or a stockpot bring well-salted water to a boil. Add black beans along with half an onion and two cloves of garlic. Reduce the flame and let it simmer till the beans are cooked. Once done, drain and keep aside.
2. Meanwhile, deseed the tomatoes and dice them, and chop finely chop onion and chili.
In a large serving bowl, add beans, corn, tomatoes, onion, and chili and mix well. Add cumin and black pepper powder. Check for seasoning and add salt if required. Top of with chopped coriander and serve!

RECIPE: Black Bean and Corn Salsa
INGREDIENTS:
1 15 ounce can black beans, rinsed and drained
1 15.5 ounce can corn, drained
1 14.5 ounce can diced tomatoes, petite (drained)
1/2 cup green onions, sliced
2 teaspoons garlic, minced
2 tablespoons lime juice
1 tablespoon olive oil
1/2 teaspoon cumin, ground (or to taste)
1/4 cup cilantro, chopped
Kosher salt (to taste)
Pepper, ground (to taste)
INSTRUCTIONS:
1: Add all ingredients together in a large bowl. Mix well.
2: Chill in the refrigerator and serve.
NOTES:
This Black Bean and Corn Salsa is prefect as a dip for tortilla chips, spooned over burritos, enchiladas, tostadas, taco salad and more.
Adjust the ingredients to taste as desired.
You can eat if before chilling if you can’t wait :)
