???? Oil-Free Tortilla Chips
Corn tortillas (I like to find ones with as few ingredients as possible. These are great!
Liquid of choice: water, lime juice, aquafaba (leftover water from beans), or veggie broth
Seasonings of choice: garlic powder, onion powder, chili powder, paprika, cumin, salt, or any other seasonings you like!
Preheat oven to 350F (if your oven runs cool, you may need to bake @ 375F) and arrange a baking tray with a silicone baking mat ( or parchment paper.
Cut tortillas into triangles, brush on liquid of choice (or dip tortilla into the liquid directly) and add seasonings. You can season either just one side or both sides, it's up to you!
Bake @ 350F for 10 minutes, flip, and then bake another 4-6 minutes, watching carefully that they don't burn. When they are golden brown and crispy, they are ready! Let them cool on the baking sheet. They will crisp up (and possibly brown) a bit more as they cool. Eat once fully cooled.
???? Black Bean Dip
2 cups black beans
1 clove garlic
1 small shallot (or sub a few TBL red onion)
1 small handful cilantro (aka coriander)
2 TBL jalapeño (reduce or omit if you don't like spicy)
1/4 tsp. cumin
1/2 tsp. chili powder (This is *not* the same as cayenne pepper! This is a blend of seasonings:
2 TBL lime juice (approx. 1 lime)
Pinch of salt, if desired
Blend until smooth and serve immediately. Enjoy!

Ready for a quick snack or easy appetizer for the weekend? This spicy black bean dip takes less than 2 minutes to throw together and it’s delicious (and so good for you!) ????
????Blend together a can of black beans (I used the spicy kind from @wholefoods but if you can’t find those, use regular & add a jalapeño if you love the heat!)
????1 heaping tablespoon of garlic
????juice of 1 lime
????swirl of EVOO
????1 heaping tablespoon of cashew queso
????all the spice you like!
Serve with tortilla chips, or for bonus points, pit the seeds out of the mini peppers and serve ????. IMO, they are way more satisfying than chips. Stick around for more easy recipes - well-blended for well-being!
