How To make Orange Biscotti
2 1/2 cups unbleached flour
1/4 cup unsalted butter
melted and cooled
1/2 cup cold water
5 tablespoons sugar
1 extra large egg yolk
2 tablespoons orange peel :
grated
1 tablespoon olive oil
1 tablespoon light rum
3 drops orange extract
1 Pinch salt
Butter for baking sheets 1 extra-large egg, beaten to blend 2 Tablespoons unsalted butter, melted and cooled Arrange flour in mound on work surface and make a well. Add 1/4 cup melted butter, water, 2 tablespoons sugar, yolk, orange peel, oil, rum, orange extract and salt into well. Gradually draw all but 1/4 cup flour from inner edge of well to center. Gather dough together and knead in remaining flour until smooth, about 1 minute. Wrap in floured towel. Refrigerate for 2 hours. Position rack in center of oven and preheat to 325~F. Lightly butter 2 baking sheets. Roll dough out on lightly floured surface to a thickness of 1/4 inch. Cut dough into 2 x 4 inch strips using scalloped pastry wheel. Place cookies on prepared sheets, spacing 1/2 inch apart. Pierce each cookie several times with tines of fork. Brush with egg glaze. Bake until light brown, about 25 minutes. Brush remaining 2 Tablespoons melted butter over hot cookies. Sprinkle with remaining 3 Tablespoons sugar. Return to oven for 5 minutes. Cool completely on rack. Store in airtight container. Yeild about 28 cookies.

I have eaten these but not made them before as I always thought they must be difficult. Turns out I was wrong; so easy to make!
My thanks to Karen from @InTheKitchenWithKaren for suggesting this one. I have taken the basic recipe, reduced the sugar content and added my own flavours. Adding a very small amount of golden caster sugar or demerara to the top before baking more than makes up for the lower sugar content. This is such a lovely crunchy, nutty biscuit that I will definitely add this one to my list of regular bakes.

How to make Almond Biscotti with Orange Zest - Glen And Friends Cooking
These are a pretty basic take on an almond biscotti recipe - I like them cooked to a softer texture, but if you like your Italian biscotti crunchier; just extend the cooking times. This Italian cookies recipe also goes by a couple other names: Cantucci, Cantucci Toscani, and Biscotti di Prato Those are the classic Italian biscotti recipes.
Ingredients
250 mL (1 cup) butter, room temperature
250 mL (1 cup) sugar
5 mL (1 tsp) pure vanilla extract
3 eggs
Zest from1 large orange
750 mL (3 cups) flour
15 mL (1 Tbsp) baking powder
5 mL (1 tsp) salt
500 mL (2 cups) whole almonds
Method:
Pre-heat oven to 180ºC (350ºF)
Cream together butter and sugar.
Cream in vanilla extract, 2 whole eggs, and one egg yolk (reserve one white).
Cream in orange zest.
Mix together the dry ingredients.
With mixer on slow, spoon in flour and continue mixing just until incorporated.
Divide dough into 3 or 4 portions and shape into flattened logs on a parchment lined baking sheet.
Whisk a little water and reserved egg white together, then brush onto each loaf.
Sprinkle tops of loaves with coarse sugar.
Bake for 20-30 minutes; just until starting to brown.
Remove from oven; and allow to completely cool on the pan.
Lower oven temperature to 325ºF.
On a cutting board; cut into ½ inch slices, then place slices back on cookie sheet standing up.
Bake at 325º F for 15-25 minutes.

These are far easier to make than I always thought they would be and now are something I often make a batch of on a lazy Sunday afternoon.

- 75g flaked almonds
