How To make Banana Butter Pecan Cookies
1 c Butter
2/3 c Granulated sugar
1 Egg
1/4 c Light molasses
1 c Mashed bananas
2 1/2 c All-purpose flour
1 1/2 ts Baking soda
1 ts Ground cinnamon
1 c Pecans; chopped
Recipe by: Woman's Day, Holiday Baking 1994 Preheat oven to 350 degrees; grease cookie sheets. In a large bowl with an electric mixer on medium speed, beat the butter until fluffy. Gradually add the sugar; beat until light and fluffy. Beat in the egg, molasses and banana. In a medium bowl, combine the flour, baking soda and cinnamon. Gradually add the flour mixture to the butter mixture; beat until thoroughly blended. Stir in the chopped nuts. Drop the dough by rounded teaspoonfuls 2 inches apart onto the prepared cookie sheets. Bake for 12 to 15 minutes, or until the center of the cookies spring back when lightly touched. Remove to wire racks to cool completely. Penny Halsey (ATBN65B). -----

Make sure the butter is at room temperature
Tip!!! Allow the cookies to cool down for 10 minutes before coating with powder sugar
If you think its too much sugar, add 1/2 cup only
PRO TIP good but not necessary- refrigate for 20 minutes before baking
Bake at 350 for 15 minutes

1/2 cup (100g) granulated erythritol sweetner
1 3/4 (175g) cups blanched almond flour
2 tablespoons (14g) coconut flour
1/2 teaspoon (3mL) vanilla extract
1/2 (2g) teaspoon salt
1/2 cup pecans (50g), chopped and toasted
-Bake at 325°F (163°C) for 5 minutes.
-Take it out from the oven and press lightly and bake it for 10-12 mins ir until it’s golden brown.
-Let it cool completely before serving.
