How To make Bacon& Cheddar Drop Biscuits
1/4 cup onion
finely minced
4 slices crisply cooked bacon :
finely minced
(reserve 2 tablespoons of bacon fat) 1 3/4 cups flour
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cold vegetable shortening
3/4 cup extra sharp Cheddar cheese -- coarsely grated
2/3 cup milk
In a skillet, cook the onion in the reserved fat over moderately low heat, stirring, until it is softened; let mixture cool. In a small bowl combine the onion mixture with the finely minced (do this in a food processor) bacon; season with freshly ground pepper. Into a bowl, sift together the flour, the baking powder, the baking soda, and the salt. Add the shortening and blend the mixture until it resembles coarse meal. Stir in the bacon mixture and the Cheddar; add the milk and stir the mixture until it just forms a soft sticky dough. Drop the dough by rounded tablespoons onto a buttered baking sheet. Bake the biscuits in the middle of a preheated 425 oven for 15 to 17 or until pale golden brown. Makes about 16 biscuits.

Ingredients:
2 c all-purpose flour
1 tbsp sugar
1 tbsp baking powder
2 tsp garlic powder
sea salt
1/2 tsp cayenne pepper
1 1/2 shredded cheddar sharp cheese
1/2 c bacon bits
1 c buttermilk
Topping:
3 tbsp unsalted butter
1/2 tsp garlic powder
1 tbsp chopped fresh parsley
How-To:
Preheat oven at 450 degrees. In a large bowl add flour, sugar, baking powder, garlic powder, sea salt and cayenne pepper. Take a spoon and mix together. In a separate bowl combine and whisk buttermilk and melted butter. Pour wet ingredients with the flour mixture. Use a spatula or spoon with rubber tip, stir until everything is moist. (Do Not stir too much or your biscuits will be tough) Fold in cheddar cheese and bacon bits. So that all your biscuits are the same size and cook at the same time use a 1/4 cup to scoop batter and place on a cookie sheet. Bake for 10-14 mins until golden brown.
Topping: Melt butter and combine garlic powder and parsley and stir.
After biscuits are ready, brush butter mixture on top of HOT biscuits. EAT IMMEDIATELY WHILE HOT!! ENJOY!

Maple, Bacon & Cheddar Biscuits
If you like the taste of maple syrup, bacon, Cheddar cheese and biscuits, you are going to love the flavor explosion of their combination.

Ingredients:
•4+ cups all purpose flour
•1 teaspoon baking soda
•4 teaspoons baking powder
•1 ½ teaspoon salt
•8 strips bacon (see How to Make Bacon, Sausage, Egg & Cheese Breakfast Rolls)
•1 cup shredded Cheddar cheese
•¼ cup (1 ¼ sticks) frozen, unsalted butter
•1 ½ cups buttermilk
•6 tablespoons maple syrup
•2 tablespoons melted, unsalted butter
Directions:
•Line baking pans with parchment paper.
•In a bowl, stir together (I use a wooden spoon.) 4 cups of all purpose flour, the baking soda, baking powder and salt.
•Crumble the bacon.
•Mix in the crumbled bacon and shredded Cheddar cheese.
•Grate the frozen butter into the dry ingredients mixture, stir until completely mixed in (I use my hands.) and set aside.
•In a separate bowl, whisk together the buttermilk and 4 tablespoons of maple syrup.
•Pour the wet ingredients into the dry ingredients and stir together with a spoon.
•Sprinkle flour on a flat surface.
•Knead the dough on the floured surface until the flour is incorporated into the dough, making it less sticky.
•Roll the dough out until it is about ½ an inch thick.
•Cut the dough (I use a 2 inch biscuit cutter).
•Place the cut dough on the parchment line baking pans.
•Mush the dough back together.
•Repeat steps 10-13 until all of the dough is cut.
•Put the cut biscuit dough in a freezer for 15 minutes.
•While the biscuit dough chills, preheat an oven to 450 degrees.
•Bake in a 450 degree oven for 13-16 minutes, or until golden brown.
•In a small bowl, whisk together the melted butter and 2 tablespoons of maple syrup to make maple butter.
•Brush the maple butter over the top of the biscuits.

Drop Biscuits have a beautiful golden brown crust that is nice and crispy. Yet when you split one in half, inside it is wonderfully soft and tender. These biscuits are so easy to make; no kneading, rolling, or shaping the biscuits. All you do is mix the ingredients together with a fork, and then 'drop' the batter by heaping spoonfuls onto you baking sheet. Serve the biscuits with soups or stews, or cut in half and spread with butter and jam and/or clotted cream. These also make a great Breakfast Sandwich; just cut in half and fill with a slice of cheese, a bacon or sausage patty, and a fried or scrambled egg. They also make a delicious Strawberry Shortcake.
Bacon, Cheddar & Scallion Biscuits
I was kind of stuck for what to make for this week's video until I saw these gorgeous flaky biscuits from Chef Mei Lin. Her's are a cheddar and scallion biscuit but I thought the addition of bacon would be extra special. While mine didn't rise as much as hers did (her biscuits are like layered towers of goodness) I am really happy with the result. Tender, flaky, buttery, savory with that bite of saltiness from the bacon...it's exactly what a biscuit should be.
Ingredients:
2C AP flour
3tsp baking powder
2tsp baking soda
2tsp sugar
1tsp Kosher salt
1/2C chopped scallions
4 slices cooked bacon
3/4C (1 1/2 sticks) grated frozen unsalted butter
4oz frozen grated cheese of your choice
3/4C cold buttermilk
