2 1/2 cups Cake flour
2 tablespoons Cake flour
1 tablespoon Sugar
2 teaspoons Baking powder
4 tablespoons Shortening
1 Egg -- lightly beaten
1 cup Milk
Spray shortening
Preheat oven to 425~. In a food processor or a large bowl,mix the flour with the salt,sugar and baking powder.Cut the shortening into the dry ingredients until the mixture is the texture of cornmeal. Seperately mix the egg with the milk,and stir all but 2 tbs. of this liquid into the dry mixture. Mix just enough to make a uniformly moistened dough. Drop spoonfuls of the dough onto a greased and cornmeal coated cookie sheet about 1" apart. Brush tops with reserved liquid.Bake in the preheated oven until puffed and brown,about 12 minutes. Cool for a few minutes before serving. Yields about 15 biscuits.

2 cups (250 g) all purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup (113 g) unsalted butter, melted and slightly cooled
1 cup (240 ml) buttermilk, cold
1. Preheat oven to 425° F. Line a baking sheet with parchment paper and set aside.
2. In a large bowl, whisk together the flour, baking powder, baking soda and salt. In a separate bowl, stir cold buttermilk and melted butter. Pour the wet ingredients in the bowl of dry ingredients and mix just until combined. The dough will be dry in some places and wet in others. Work quickly so the dough stays cold.
3. Using an ice cream scoop (or a large spoon), scoop biscuits onto prepared baking sheet, spacing them apart 1 to 2 inches. Bake biscuits at 425° F for 15 minutes or until the edges start to turn golden. Allow biscuits to cool on the pan for 5 minutes before transferring to a wire rack to cool for another 5 minutes. Serve warm with butter and jam.
Buttermilk substitute: Add 1 tablespoon white distilled vinegar to a measuring cup, then add milk and fill to the 1 cup measuring mark. Stir and let sit for 5 minutes before using in the recipe.

Line a baking sheet with parchment paper and set aside (alternatively you may bake biscuits directly on ungreased baking sheet).
